POSTS STORIES REELS TAGGED

Massimago | Duca Fedele

There’s a valley outside Verona where the light hits differently, all soft hills and quiet vines in the Mezzane Valley. The Cracco family has held this land since 1883, but the story really starts in 2003, when Camilla Rossi Chauvenet took over her mother’s vineyards with an agronomy degree, no equipment, and no production facility to her name. She sold her own car just to afford a tractor. That’s the kind of will this place was built on.

Duca Fedele carries her labels well: modern lines on the bottle for a modern reworking of ancient grapes, Corvina, Corvinone, Rondinella, grown on well exposed slopes and vinified to stay fresh and expressive rather than heavy. Bright ruby in the glass, ripe strawberry and cherry, a whisper of balsamic and pepper underneath. Fully organic since 2014, one house rule on the property: leave your anxiety and your shoes at the gate.

Perbacco doesn’t really do “small plates” energy, even at a packed Tuesday lunch, the pasta arrives like it’s the main event, because it is.

Two that stopped the conversation: the agnolotti dal plin, tiny parcels of roasted meat and vegetables in a savoy cabbage sugo, the kind of dish that’s been on this menu so long it’s basically furniture at this point, in the best way. I decided to pair the 2024 Cuturi ‘Tuma’ Primitivo with this, picking up all these earthy mush aspects.

And then something I’d genuinely never had before. creste di gallo, “rooster’s combs,” ruffled little ribbons tangled up with wild mushrooms, spinach, ricotta salata. Paired with the MariaBella from Massimago was to die for, and the shape of the pasta alone is worth ordering.

There was also a plate of octopus, paired with the Cuturi rosé and the Femì, the one with the lips on the label. Salty, savory, that rosé cut right through it.

If you’ve never had pasta shaped like a rooster’s comb, today’s the day. 🐓🍝
