Carne Asada Steak Frites

Ingredients:
Steak and Marinade:
- 2 lbs Skirt Steak
- 1/4 Cup Olive Oil
- 2 Garlic Cloves (minced)
- 3 TBSP Rice Wine Vinegar
- 1 TBSP Salt
- 1 TBSP Chili Powder
- 2 tsp Black Pepper
- 1 tsp Cumin
- 2 Limes (squeezed)

Frites:
- Russet Potatoes
- Corn Starch
- Salt
- Cilantro

Directions:
1. Marinate steak and let sit for up to 24 hours
2. Peel and cut potatoes into desired fry shape
3. Rinse in cold water to remove starch then boil in salted water until soft
4. Dry potatoes then dust lightly with corn starch
5. Heat oil to 350 F and fry potatoes until slightly crispy then remove
6. Fry frites a second time until golden and crunchy
7. Toss with salt and cilantro
8. Sear steak hot and fast on both sides until a crust forms on the exterior
9. Serve steak over fries and garnishes of choice (guacamole)

Orange Chicken

Ingredients:
- 3 lbs Chicken (cubed) (dark meat preferred)
- 2 Eggs
- 1/2 Cup Corn Starch
- 1/4 Cup Soy Sauce
- 1 tsp White Pepper
- Green Onions (diced)
- 5 Garlic Cloves (minced)
- 1 in Knob Ginger (grated)
- 3 Oranges (squeezed)
- Orange Zest
- 1/2 Cup Brown Sugar
- 1/4 Cup Soy Sauce
- 2 TBSP Rice Wine Vinegar
- Sesame Seeds

Directions:
1. Mix chicken with eggs, cornstarch, soy sauce, and white pepper until it forms a batter consistency
2. Heat oil to 350 F and fry until chicken is 150 internally and remove
3. Add chicken back to oil and fry for another 60 seconds (this double fry is not pictured in the video but was done)
4. In a pan, saute green onion whites, garlic, and ginger until fragrant
5. Whisk together orange juice, orange zest, brown sugar, soy sauce, and rice wine vinegar and add to pan
6. Reduce sauce to desired consistency
7. Add chicken to sauce and toss until coated
8. Serve over rice and garnish with green onions and sesame seeds

Poke Tuna Tacos

Ingredients:
- Raw Tuna Steak (Minced)
- Cucumber (julienned)
- Avocado (Sliced)
- Crispy Fried Onions
- Green Onions (diced)
- Mirin
- Rice Wine Vinegar
- Sesame Oil
- Kewpie Mayo
- Sriracha
- Soy Sauce
- Thai Sweet Chili Sauce
- Honey
- Sesame Seeds
- Dried Nori Seaweed

Directions
1. Mix minced tuna with mirin, rice wine vinegar, and sesame oil
2. Make a spicy mayo with kewpie, sriracha, and soy sauce
3. Marinate the cucumber in a mixture of rice wine vinegar, soy sauce, Thai sweet chili sauce, honey, sesame oil, and sesame seeds
4. Add mayo to a seaweed wrapper then layer on tuna, cucumber, avocado, crispy fried onions, green onions, and sesame seeds
5. Wrap like a taco/burrito and enjoy!
