Rushed home for the first sunny Friday since daylight savings. Jumped on our favorite @barlettaboats from @aquasportnashville to run across the lake to @mobydickys for some takeout at sunset! My heaven #jeremypmorgan #michaelaverett #oldhickorylake #barlettaboats #aquasportnashville

These ✨ Bacon, Tomato, Egg and Goat Cheese Tarts ✨ from our Culinary Partner, Michael Averett, are flaky, creamy, savory - and honestly dangerous to make if you’re trying to share. 😋🥓

Ingredients:

-4 ounces goat cheese, softened
-2 ounces cream cheese, softened
-1 teaspoon fresh thyme, chopped
-1 1/2 teaspoons fresh basil, chopped
-1 teaspoon fresh tarragon, chopped
-1/2 teaspoon black pepper
-1 frozen puff pastry sheet, thawed
-5 eggs, divided
-4 bacon slices
-4 grape or cherry tomatoes, sliced in half
-Salt and pepper, to taste
-Parsley, to garnish

Directions:

1. Preheat oven to 400 F and place a sheet of parchment paper onto baking sheet.
2. In a medium bowl mix goat cheese, cream cheese, thyme, basil, tarragon and black pepper until creamy.
3. Unroll the thawed puff pastry on a floured surface. Divide pastry into 4 squares.
4. Spread 1 tablespoon of the cheese and herb mixture evenly onto each pasty, leaving a 1-inch border.
5. Roll the edges under on each pastry and pinch the corners. This will keep the egg from spilling over the edge when baking. Beat 1 egg and brush each pastry with the egg. Transfer to prepared baking sheet and bake for 10 minutes.
6. While baking the puff pastry, cook your bacon according to package directions and set aside.
7. Take the pastries out of the oven. Layer each pastry first with 1 slice of bacon, 1 uncooked egg and 2 slices of tomatoes. Top with salt and pepper. Bake for 13-14 minutes until the egg is cooked. The egg yolk will be a little runny.
8. Garnish with parsley and serve warm.

I love surprising friends for their birthdays with a big ole balloon arch! What’s incredible is staying at @theholidayhutt allows soooo much space to do these. And it’s right by Sunset marina on Dale Hollow lake👏🏽👏🏽👏🏽

It’s moments like this that make the past 20 years of working my butt off worth it. Nothing makes me happier than driving my boat on a sunny day with my furbaby Blanche and family and friends.

As a little boy all I dreamed of was to have a lakehouse, a nice boat and nice vehicle to pull it with. The fact @michael_averett and I made that dream come true in June of 2021 before we turned 40 still blows my mind. #hardwork #hardworkpaysoff #oldhickorylake #jeremypmorgan #michaelaverett #dontstop #dreambig #dreams #dreamscancometrue #workhard #workhardplayharder #barletta #barlettapontoonboats #barlettaboats
