Which one are you making first? #SpiceandSoul #Microdrama #foodsustainability #CivicStudios [Microdrama, Food And Love, Sustainable Cooking, Food Waste Reduction, Short Films on Food and Sustainability, Sustainable Cooking, Farm To Table, Local Food, Seasonal Produce, Food Stories, Vertical Series] 🍈 KATHAL DUM BIRYANI: Serves 4 You’ll need: 500g rice, 500g raw jackfruit, 5–6 onions, 2 tomatoes, ½ cup curd, ginger-garlic paste, 3–4 green chillies, turmeric, chilli, coriander and biryani masala, mint and coriander, saffron or kewra water, ghee and whole spices, salt To make: Step 1: Oil your hands, peel and cube the jackfruit, discarding the core. Step 2: Marinate with the powdered spices and salt, then sear until golden. Step 3: Brown the onions with whole spices. Add the tomatoes and curd, and cook until the oil separates. Step 4: Add the jackfruit and simmer until tender. Meanwhile, par-cook the rice with whole spices. Step 5: Layer the jackfruit and rice, then finish with herbs, saffron or kewra water, and ghee. Step 6: Dum cook for 20 minutes, rest and serve. 🌽 BHUTTE KI KHEES Serves 4 You’ll need: 5 corn cobs, 1½ cups milk, 2 tbsp oil or ghee, Mustard and cumin seeds, Ginger and green chillies, Hing, turmeric and salt, Lemon and fresh coriander, Jeeravan masala To make: Step 1: Grate the corn and set it aside. Step 2: Heat the oil or ghee and temper the mustard seeds, cumin, ginger, green chillies and hing. Step 3: Add the corn and turmeric, and cook for 2–3 minutes. Step 4: Pour in the milk and simmer for 15–18 minutes, stirring occasionally. Step 5: Finish with lemon juice and coriander, then sprinkle generously with jeeravan masala 🍛 NO-WASTE VEGGIE KORMA Serves 4 You’ll need: 2 cups mixed vegeta
