SEAFOOD BOIL - TONIGHT 🌊🦀🐟 
Granted, a rather last-minute announcement (a marketing issue, not an operational one), but if you happen to be at a loose end this evening, The Cartford might just be the place to be. For the first time ever, we’re bringing a proper Deep South seafood boil to the Fylde, and if the current smell of the kitchen is anything to go by, it’s going to be something special.

As usual, @midlandfishco have supplied us with some of the finest seafood British waters have to offer, and it’s all getting the full Louisiana treatment: boiled in a stock packed with Old Bay, lemon and garlic, then smothered in garlic butter.

It’s on our Specials List tonight from 5:30pm, alongside our usual menus. There are still a few tables left, so if you’re quick, there could be a pot of the good stuff with your name on it. Book at the link in bio.

STREET FOOD & LIVE MUSIC 
Tomorrow night, alongside our usual menus, we’re unleashing a street food inspired specials list - ‘inspired’ being the operative, and perhaps rather tenuous, word. Because this ain’t no polystyrene box and a plastic fork job - we’re talking seriously premium ingredients - courtesy of @midlandfishco - cooked over open flame and treated with the respect they deserve.  We also have live music in from the talented Peter Churchman, starting from 7pm in the bar area.

Tomorrow is set to be a corker - see you then, friends!

banging wee special to start the week @thisismadre Leeds!

in the interests of zero wastage and, of course, every ingredient being delicious when given the right love! Smoked Corn + Octopus Croquettes.

Working with beautiful, whole Octopus from @midlandfishco, means each time we go to prep the hands we’re left with the entirely usable heads. So we treated them with same love as the hands, seared in the fire and confit in Pork Fat + Guajillo Chiles 😮‍💨😮‍💨

Each service when we have tortillas left we’ve been leaving them above the fire to dehydrate, once they’re dry you can blend to what is essentially Masa Harina again.

Using this flour as a starch for a béchamel, adding some extra smoked and dried corn, as well as our confit octopus we’ve made our own riff on classic Takoyaki :) finished with our house Cola BBQ sauce and some Cremma Fresca, these are a taste sensation 👌👌
