We finally made it to @gingiechicago and WOW! Now I get what all the buzz is about! 👏➡️➡️➡️➡️

After a fire forced the restaurant to close, Gingie reopened to great fanfare. And I can see why!

I’ve already experienced the incredible food of @chefbrianlockwood at @midosujichicago so I knew we were in for something special. But WOW! The entire experience exceeded expectations.

The vibe, the food, the stunning wallpaper celebrating Chicago’s culinary icons, and the top-shelf wine and cocktail selections. Every detail was thoughtfully done.

A few favorites from the evening:
🍣 Handroll Sets
🦪 Embered Oysters
🍝 Potato Gnocchi
🥩 Special Rib Eye Cap
🍯 Honey Meringue with milk ice cream and sesame was an amazing finish!

What a special evening! Thank you @bokarestaurantgroup for hosting. You’ve officially gained another big fan! ❤️

Chicago, put this one on your list!

Midōsuji, a tiny hand roll bar, is tucked inside the Chicago Athletic Association. It seats less than ten people, and each seat faces the chefs assembling the dishes/rolls. The miso salmon hand roll was my favorite! I recommend calling ahead before going specifically for these matchboxes; I did and this one was waiting for me when I arrived for my reservation. #chicagomatchbooks #chicagomatchboxes #chicagorestaurants #chicagofoodie #matchbox

🍽️ The real career flex? Knowing you’ll never know it all.

After decades in kitchens, @ChefBrianLockwood (@MidosujiChicago and @GingieChicago) isn’t chasing mastery. He’s chasing curiosity.

His take? Even four or five lifetimes wouldn’t be enough to explore everything food has to offer: different cultures, techniques, ingredients, and traditions. 🌎👨‍🍳

And that mindset applies to his team, too. One of his favorite parts of hiring someone new is finding out how they think about food and what they can teach him.

Because no matter how far you get in your career, there’s always something (and someone) new to learn from. 👀

🐟 Career plot twist: Sometimes the “side quest” becomes the thing you’re known for.

After working in restaurants since he was 14, @ChefBrianLockwood (@MidosujiChicago and @GingieChicago) wanted a change. So in his early twenties, he moved to Maui and traded the kitchen for a local fish market.

For a year, he broke down fresh catch straight off fishermen’s boats, made poke and rice bowls, and fully geeked out on butchery all while wearing board shorts and flip flops. 🌴🔪

What felt like a detour ended up shaping his career. Decades later, butchery is still one of Brian’s biggest passions.

Your career doesn’t have to follow a straight line. Sometimes the random experience you say yes to becomes part of your whole career story.

👀 That one stage could matter more than you think.

🎙️ @ChefBrianLockwood (@MidosujiChicago and @GingieChicago) tells @AliceCheng411 how cooking for Chef Corey Lee (@CLee_Benu) at The French Laundry (@_TFL_) helped open a door years later.

Brian was working at @GaryDankoSF when he first staged there. The timing wasn’t right to make the move, but the experience stuck with him. Years later, he went back to Napa and reconnected with Chef Corey, who still remembered his cooking. No second stage needed. Brian landed the job he’d been chasing.

Show up. Do good work. Leave a good impression. You never know when that connection might come back around. 👏

The most incredible night at Midōsuji. Enough to make make me question why I live on the East Coast.

Tucked inside @chicagoathletichotel you’ll find @midosujichicago , a pared-back, à la carte hand roll bar that celebrates small, impeccably sourced ingredients with a focus on texture, umami and the comforting, unpretentious flavors of Osaka. You’ll also find the nicest, most talented people and chefs you’ve ever met. Folks who effortlessly echo the restaurant’s refined yet unpretentious attitude.

I went to Midosuji the night before my 32nd birthday. It is a truly a night I will remember forever. Hospitality - and craft - at their absolute finest, their absolute most effortless, and done by people you’re glad to know are making and thriving. Thank you, Rashad, Grant, Manish, and Leo!
