Dýňová domácí focaccia 🍂🍁 Suroviny: 400g hladké mouky 320g vody 28g olivového oleje 4g cukru 8g soli 4g sušeného droždí 100g dýňového pyré Postup: 1. Ve velké míse smíchejte všechny ingredience, dokud není vidět žádná suchá mouka. Nechte 20 minut odpočinout při pokojové teplotě. 2. Pro vytvoření krásné struktury lepku udělejte 4–5 sérií natahování a překládání těsta. Postupně bude hladší a pevnější. 3. Nechte těsto kynout, dokud nezdvojnásobí svůj objem. 4. Do formy o velikosti 9 × 12” (cca 23 × 30 cm) nalijte olivový olej a opatrně do ní přendejte těsto. 5. Nechte ještě 45–60 minut dokynout. 6. Povrch bohatě pokapejte olivovým olejem, prsty do těsta udělejte typické důlky a přidejte dýňové pyré, rozmarýn a posypte hrubou solí. 7. #baking #bakingwithlove #autumn #focaccias

Two loaves, one bake! 🥖✨ Cheese Lover 🧀 and Choco 🍫—fresh out of the oven and made with love. This chocolate sourdough was insane! 🤯🍫 5-hour bulk fermentation at 26°C, straight into the freezer for 1 hour, then baked on the same day. I wasn’t expecting it to turn out this well, but I’m so happy with the result! 🥖✨

Sourdough with sun-dried tomatoes and green olives. Made for the grill. Made on my birthday. Made during a heatwave with the oven on full blast. Saw @millabred add spelt to her ciabatta dough and immediately had to try it myself. A mix of bread flour and pizza flour, ~15% spelt, 20% starter, 80% hydration, 2% salt. A very happy starter. And some questionable decision-making. ________________________________________ Sauerteigbrot mit getrockneten Tomaten und grünen Oliven. Gebacken zum Grillen. An meinem Geburtstag.
