Missing Pani Puri ❓❓
Why not make it at home 😋
Here's my recipe for Homemade Pani puris. .
.
.
INGREDIENTS :- .
.
•1 cup semolina/suji/rava
•2 tbsp. Refined Oil •7-8 tbsp. Water (as required) •20-30 pudina leaves
•10-15 coriander leaves
•3 green chilies •1 tsp. Black salt •¾ tsp. Red chili powder •½ tsp. Cumin powder •2 cups water •1 lemon juice •3 boiled potatoes •½ red chilli powder •1 tap. black salt
•¾ tap. black pepper .
.

INSTRUCTIONS :-
.
For PANI PURI'S :- .
1. Take a bowl and put semolina, oil and mix them well until it forms a sand like texture.
2. Add 1-2 tbsp. water at a time and knead a smooth dough that is neither too soft nor to stiff. *( Suji absorbs water so if you knead a stiff dough, it will get difficult to roll out the dough later)*
3. Cover the dough with a wet cloth and keep it aside for 30 minutes to set.
4. After the resting period,
Divide the dough into 40 equal parts and roll them out.
Place the puris in a plate and cover them with a moist kitchen towel.
5. Heat oil in a deep frying pan over medium flame for deep frying. When oil is medium hot, take 6-7 puris and slide them gently in oil. Do it one after another.
6. Keep flipping them on both sides until it reaches a light golden brown color. .
.
.

For making SPICY TANGY WATER (teekha pani) :- .
1. Take a mixer grinder and add green chilies, pudina, coriander, red chili powder , lemon juice.
Grind this to a smooth thick paste ,also add water ( 6-8 tbsp.) .
2. Strain the water in a bowl and keep the residue aside (the residue is very flavourful, use that in making aloo masala/ filling) .

3. Add 2 cups of water ,black salt and cumin powder ,give it a stir. (Add boondi just before serving)*optional* .
.
.
For POTATO FILLING:-
.
Take boiled potatoes, cut them into small pieces then add red chili powder, black salt, cumin powder, black pepper ( you can also add boiled chickpeas for more flavour). .
