Mary Jo’s Malibu Chicken Dinner 🍗🥔

Restaurant-style but easy enough for a weeknight! Grilled chicken topped with ham & Swiss, crispy potatoes, fresh sides, and a creamy dipping sauce. A family favorite!

Malibu Chicken Marinade

For 2 lbs chicken tenderloins:

• 1 bottle Trader Joe’s Caesar Dressing
• 6 garlic cubes (or 6 cloves, minced)
• 1½ tbsp Montreal Chicken Seasoning*

Marinate 4–8 hrs (or overnight).

No Montreal seasoning? Use paprika, garlic powder, onion powder, oregano, coriander, salt & pepper.

Cook

Grill chicken until done.
Place on foil-lined pan, top with ham & Swiss.
Broil 2–4 mins until melted.

Creamy Dipping Sauce

• ¼ cup Greek yogurt
• ¼ cup mayo
• 1 tbsp Dijon or yellow mustard
• 1 tbsp horseradish (less if preferred)

Mix & chill.

Crispy Roasted Potatoes

Ingredients

• Baby potatoes, halved
• 1 tbsp olive oil
• 1 tsp garlic powder
• 2 tsp Italian seasoning
• 3 tbsp grated Pecorino or Parmesan
• ½ tsp salt + pepper
• Olive oil spray

Instructions

1. Preheat to 400°F
2. Spread oil on sheet pan
3. Add seasonings & cheese
4. Place potatoes cut-side down
5. Spray tops, add a little salt
6. Roast 30–40 mins until golden & tender

Serve With

• Fresh fruit
• Raw veggies & dip
• Sautéed zucchini

Simple, filling, and great for leftovers! Note: my favorite tenderloins are the frozen 6lb bag from Sam’s . * also I do this same recipe with Olive Garden dressing in place of ceaser and it’s also delicious. Shortcut marinade

My baby is moving on to kindergarten this fall, and honestly… I’m not okay. 🥹 I really thought I would have babies forever, and I’m just not ready for this season to end.

Wren is pure sunshine. She lights up every room she walks into, and I feel so incredibly lucky that I get to be her mama. Watching her grow has been the greatest gift, even if it’s happening way too fast. I love you so much, Wren. 💛

We are beyond grateful for the amazing teachers at MGES and for the love, patience, and care they pour into these kids every single day. This program has meant so much to our family, and I truly couldn’t imagine a better place for her first school experience. Thank you for all you do and for helping my sweet girl shine even brighter ✨

Cal blessed baby Wren today🤍🤍🤍 it was so sweet. She has been such a blessing in our home. She is such a sweet little baby and has brought so much happiness in our home.
