I’m rolling into this long weekend with a meal that’s not only comforting but so flavorful! These chicken and sundried tomato meatballs in a creamy orzo are so simple to prepare, yet appear as though they’ve been cooking on the stove for hours. If you’re rained in this weekend, try this recipe, spend some time around the table with family, and savor life’s little moments that always turn out to be the most memorable. 🍗🍝🍅🌿🍽️

Ingredients
Meatballs
1 lb ground chicken
2 tablespoons sundried tomato oil
5 sundried tomatoes in oil, chopped
3-4 tablespoons Italian breadcrumbs
2 tablespoons parsley
1 teaspoon old bay or Cajun
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon Italian seasoning
1 teaspoon salt
1/4 teaspoon pepper

1/4 cup oil to fry meatballs (can use oil from the sundried tomatoes)

Pasta
2 tablespoons sundried tomato oil
1 1/2 cups orzo
1/3 cup dry white wine
2 cups chicken broth
1/2 cup heavy cream
1/2 cup Parmesan cheese
3 cloves garlic, minced
1/4 cup sundried tomatoes, chopped
1 cup tomato sauce
2 cups baby spinach or kale
1/2 teaspoon paprika
1/4 teaspoon chili powder
Salt and pepper to taste

Directions
1. Add all the meatball ingredients to a bowl and combine. Form small meatballs.
2. Heat the oil in a large pan and add enough meatballs to fill the pan without overcrowding. Fry until all sides are browned, about 5 minutes, and then remove onto a plate. (They’ll cook more later)
3. Add the 2 Tablespoons sundried tomato oil for the orzo in the same pan, and sautee your garlic for a minute. Add the sundried tomatoes, paprika, chili powder, and cook another minute or two.
4. Add the white wine and allow the alcohol to burn off, about 3 minutes.
5. Add the tomato sauce and salt, orzo and chicken broth. Cook until orzo is al dente, about 20 minutes, adding extra broth if too dry. Taste to adjust seasonings.
6. Add the meatballs back to the pan, pour in the heavy cream, Parmesan cheese, and spinach/kale.
7. Allow the sauce to cook until thickened and spinach is wilted.
8. Serve with extra Parmesan cheese. Enjoy!

30 days of EVOO + lemon every morning… and this one felt different.
I’ve always been a morning person. I love that quiet window before the day starts, it’s my time. But I’m also always looking for small ways to switch it up, to keep it feeling intentional.
This little 30 day challenge became that for me.
At first it was about the health benefits, but it turned into something more. Just 30 seconds of doing something for me before anything else.
And yes, the physical side speaks for itself.
No bloat, like at all. My skin has calmed down so much and I just feel good.
But it also got me thinking… how many things am I actually using daily that are in their pure form?
If I’m being honest, not many.
So much of what we cook with or grab is mixed, processed, or has something added. And this tiny habit made me realize that for at least one part of my day, I’m getting the real thing. No fillers, no extras, just simple, high quality ingredients.
And weirdly, that feels really grounding.
I mean… if I’m doing an EVOO lemon shot every morning, it obviously needed a bougie shot glass to match the vibe.
Curious… what simple morning habits are you guys doing lately that actually make you feel good but take no time? 🫒🍋
