Weekend Rituals ☕️

Slow mornings. Good coffee. Record on the turntable, and a little time by the ocean 🐚
Our weekends usually begin with a coffee before Col heads off for a surf, and ends with breakfast together in the garden 🌿

Our new @moccamaster_aus in Pepper Yellow has found a very happy place here - a little pop of colour and more importantly, a very good cup of coffee to start our day.

Weekends are made for slow living 💛

Bit of Rodriguez, coffees on, double tulips still going strong, still in my Hommey robe and very much into my latest breakfast obsession:

Homemade olive oil, honey & fennel granola, Greek yoghurt, poached rhubarb & blood orange.

Perfect.

Also a very good reminder to clean the outside of my kitchen window asap.

IRISH COFFEE JELLY

When I was a wee lad Mum would often end weekend dinner parties by making Irish Coffees – black coffee spiked with Irish Whisky or Liqueur, topped with whipped cream – to end the night. While too young to enjoy these at the time, the memory of them makes me smile for those care-free days.

So, with my trusty @moccamaster_aus coffee machine at the ready I’ve recreated this memory in dessert form, with a sweetened coffee jelly, an Irish whipped cream topped with chocolate chips. It’s like a grown-up frog in a pond – what’s not to love?!

JELLY
- 5 teaspoons of gelatine powder bloomed in two tablespoons of cold water
- 1 litre of freshly brewed coffee
- 3-4 tablespoons of caster sugar

IRISH WHIPPED CREAM
- 300ml thickened cream (at least 35% fat)
- 2 tablespoons icing sugar
- 1 ½ tablespoons Irish Cream Liqueur (Eg. Baileys)
- Dark chocolate chips, or a block of chocolate to finely shave over the assembled dessert

METHOD
To prepare the jelly start by lining a large, lipped baking tray with plastic wrap. In a small bowl, whisk the gelatine into the cold water. Don’t be alarmed when it solidifies quickly – it’s supposed to do this! Set aside to bloom while you brew your coffee. Pour the brewed coffee into a heat proof bowl and add 3-4 tablespoons of sugar, depending how sweet you would like the jelly to be. Whisk until the sugar is fully dissolved. Place the bloomed gelatine in the microwave for 20 seconds to melt. Pour the hot, melted gelatine into the hot coffee and whisk to combine. Place a sieve over a large jug. Pour the coffee through the sieve into the jug to remove any lumps of gelatine that may have formed. Place the lined tray on a shelf in your fridge and then slowly pour in the jelly. Leave the jelly to set for at least 4 hours, or overnight.

To prepare the Irish Cream, whip the cream and icing sugar to medium/stiff peaks. Add in the Irish Cream Liqueur and whip to stiff peaks. Place the prepared cream in the fridge until needed.

The trophies are in the house! 🏆

Well… the hotel room, to be fair.

They absolutely fit the brief: questionable taste, completely over the top and truly things of beauty only a mother could love. Exactly what I wanted. 🤣

And they won’t be the only trophy-like things our top three will receive. Those ones come in boxes… 👀 More on that later.

Now I just have to somehow get these beauties back to Aotearoa in one piece, then pimp them appropriately with the correct coloured ribbons. Because details matter, folks. 🔴🟡🔵

Want to see who gets to take these magnificent monstrosities home, along with the bragging rights, of course?
