🎃🥥 PUMPKIN IMPOSTOR CREAMi & COCO-NOT PUMPKIN Makes 2 CREAMi pints—2 flavors! My CREAMi Chronicles continue! A PUMPKIN CREAMi with NO pumpkin! 😂 Plus coconut flavor WITHOUT coconut milk or cream—and their saturated fat! 🌱 🛒 INGREDIENTS 🍠 4–5 cooked Mini Carolina sweet potatoes (Trader Joe’s) 🎃 ½ small roasted Honeynut squash (skin on) 🌱 10.9 oz Mori-Nu silken tofu 🥛 PlantStrong oat milk, just enough to blend 🍯 6–8 Deglet or 3–4 Medjool dates 🍂 ½ tsp+ pumpkin pie spice, to taste 🤍 ½ tsp vanilla powder (optional) 🥄 1 tsp vanilla extract 💪🏼 Optional: ½–1 scoop Wellious Vanilla 🧂 Optional: pinch salt 🥥 Coconut extract: 3 capfuls for 1 pint; 6 for both 👩🏻‍🍳 MAKE IT! 1️⃣ Cover dates with JUST enough oat milk. Microwave 1–2 min (watch for bubbling!), then soak until soft. 2️⃣ Blend dates, soaking milk & all ingredients EXCEPT coconut extract. Add milk sparingly. Blend SUPER SMOOTH to a VERY THICK MILKSHAKE—like pancake batter! TASTE & adjust sweetness/spice BEFORE freezing. 3️⃣ Pour half into pint #1: PUMPKIN IMPOSTOR! 🎃 4️⃣ Blend 3 capfuls coconut extract into remaining half for pint #2: COCO-NOT PUMPKIN! 🥥 For 2 coconut pints, add 6 capfuls before dividing. 5️⃣ Stay BELOW MAX FILL; freeze FLAT 24 hrs. 🍦 SPIN IT! • ICE CREAM or LITE ICE CREAM. • Crumbly? Add 1 tsp plant milk & RE-SPIN. • Still crumbly? Add a few drops & RE-SPIN, or RE-SPIN dry. • Creamy? Make a hole, add mix-ins & press MIX-IN! 🥣 MIX-INS: Pecans (add fat!), Grape-Nuts or homemade crunchy granola, Ezekiel cereal ☁️ TOPPING: Whipped aquafaba + maple syrup. 💡 MY CREAMi TIPS! ✔️ Silken tofu & sweet potatoes add creaminess! ✔️ Soy milk adds creaminess, but also calories & fat. I don’t pair it with silken tofu. ✔️ THICK IS THE TRICK! Blend smooth; taste batter before freezing! ✔️ Expect 2–3 spins; less liquid is more. ✔️ Flatten leftovers before refreezing. KISS – Keep it Simple & Scrumptious 😘 Ana María 🫶🏼 #ninjacreami #creamirecipes #dairyfreeicecream

🌱 SOY IS SO MUCH MORE THAN TOFU! How many of these soy foods have YOU tried? 🤔 Most people think of TOFU when they hear SOY, but there are SO MANY ways to enjoy this versatile, protein-rich legume! 💚 Soy foods come from the same soybean plant, but how they’re harvested, processed, fermented, or prepared makes all the difference! 🫘 WHOLE SOYBEANS • Mature soybeans – Cook like other beans! • Edamame – Young green soybeans. • Mukimame – Shelled edamame. • Soy nuts – Roasted soybeans. • Black soybeans – A different soybean variety. 🌱 TOFU VARIETIES • Silken – Creamy sauces, desserts & CREAMi! • Soft – Scrambles, soups & marinades. • Medium – Soups & gentle cooking. • Firm – Scrambles, baking & stir-fries. • Extra-firm – Air-frying, grilling & nuggets! • Super-firm – Dense, higher protein per ounce. • Yuba – Soy milk skin. • Frozen tofu – Spongy, absorbs marinades! • Smoked tofu – Delicious smoky flavor. 💡 Silken tofu can ALSO be EXTRA-FIRM! I love Mori-Nu shelf-stable silken tofu! 🥛 SOY MILK & MORE • Soy milk • Soy yogurt • Soy kefir • Soy cream • Soy-based cheeses, like my homemade cream cheese! 🍄 FERMENTED SOY • Tempeh – Protein & fiber! • Miso – Fermented soybean paste. • Natto – Rich in vitamin K2. • Tamari & shoyu – Soy sauces. • Doenjang – Korean soybean paste. • Douchi – Fermented black soybeans. 🍝 SOY PROTEINS • Soy curls • TVP / textured soy protein • Soy shreds, chunks & granules • Soy protein concentrate & isolate 🌾 OTHER SOY FOODS • Okara – Fiber-rich soybean pulp. • Kinako – Roasted soybean flour. • Soy flour • Soybean sprouts • Soy noodles & pasta ⚠️ REMEMBER! Not all soy foods are nutritionally equal! ✔️ Whole soybeans, edamame & tempeh retain substantial fiber. ✔️ Tofu & soy milk provide protein but generally less fiber. ✔️ Some tofu is more calorie-dense and higher in fat. Read labels! ✔️ Soy isolates are more processed. ✔️ Soy condiments can be HIGH in sodium! Choose mindfully for your low-fat WFPB lifestyle! 🌱 💚 SO MANY WAYS TO ENJOY SOY! 👇 WHICH ONE WILL YOU TRY NEXT? 🥭🌈Rainbow Pudding🌈🥭 The prettiest way to start your morning! Three dreamy layers of matcha, ube & butterfly pea, topped with juicy mango… and the best part? This colourful pudding is completely vegan! 💚💜💙 Made with silky silken tofu for a creamy texture, chia seeds and a touch of sweetness from @real.allulo allulose, this is such a fun yet nutritious way to switch up your breakfast or snack routine. I used Allulo’s matcha, ube & butterfly pea powders to create the three naturally colourful layers — each bringing its own beautiful colour and flavour to this recipe! 🌿🍠🦋 ✅Vegan
✅Creamy & satisfying
✅Naturally colourful ingredients
✅Prep-ahead friendly
✅Sweetened with Allulo allulose for no blood sugar spike The hardest part is waiting overnight for it to be ready! Save this recipe for your next breakfast 🙌 Recipe 1. To a blender, add: silken tofu (@morinutofu ) vanilla almond milk (@almondbreezesa ) vanilla essence chia seeds Allulo allulose (@real.allulo ) 2. Blend until completely smooth and creamy. 3. Divide the mixture evenly between three small bowls. 4. Add 1/2 tsp matcha powder to the first bowl, 1 tsp ube powder to the second and 1 tsp butterfly pea powder to the third (@real.allulo )Mix each portion thoroughly until evenly coloured. For the smoothest, most vibrant finish, blend each portion separately. 5. Spoon the three pudding mixtures into a glass or jar, layering the colours carefully. 6. Top with mashed and sliced mango. 7. Cover and refrigerate overnight, allowing the chia seeds to thicken the pudding ( for an extra thick pudding, add up to 2 tbsp) 8. Enjoy straight from the fridge! #highproteinvegan #breakfast #eattherainbow #chiapudding #tofupudding

🇪🇸🌱 TORTILLA DE PATATAS | No Eggs, No Oil! Jay and I made this Spanish potato tortilla for brunch all the time during our SAD days. All those eggs and olive oil made me hesitant to recreate it WFPB—I didn’t want to be disappointed! Well, I FINALLY DID IT! 😍 Just like we remembered! SO GOOD, the TWO of us ate the ENTIRE tortilla with a side of steamed Kale! 😂 Guilt-free, with silken tofu, potatoes & wholesome ingredients. No oil or refined sugar! 🥔 POTATOES • 8 medium Idaho potatoes, peeled & thinly sliced • 1½ cups water Instant Pot: HIGH PRESSURE 0 minutes, then NATURAL RELEASE. Once released, open lid & set aside. 🍅 TOMATO TOPPING • 12 Roma tomatoes, sliced • 1–1½ tbsp maple syrup • Water; optional pinch iodized salt Water-sauté tomatoes with maple syrup until reduced , but don’t let tomatoes completely disintegrate. Set aside. 🧅 SHALLOTS • 12 thinly sliced shallots OR 1 large Vidalia onion • 1–1½ tbsp maple syrup; water Water-sauté with maple syrup until soft & translucent, NOT caramelized. Set aside. 🥣 “EGG” BINDER • 10.9 oz Mori-Nu silken tofu @morinutofu • 2½ tbsp chickpea flour @bobsredmill • 1 tbsp cornstarch • 1 tbsp apple cider vinegar • ½ tsp turmeric • ½ tsp kala namak (black salt)—essential for eggy flavor! I get mine on Amazon. • Soy milk, just enough to blend @edenfoods Blend smooth, adding ONLY enough milk for a THICK milkshake consistency. Adjust kala namak to taste! 👩🏻‍🍳 ASSEMBLE 1️⃣ Gently fold potatoes, shallots or onions & binder together. 2️⃣ Spread in a 10.5-inch nonstick skillet. Cook on LOW (2–3). COVER—steam is key! LOW & SLOW is worth the wait! 3️⃣ When edges turn golden, loosen with spatula. Flip onto a plate larger than pan, then gently slide back into skillet. 4️⃣ COVER until second side is lightly golden. Flip onto plate. 5️⃣ ⚠️ REST 10 MINUTES TO SET! ⚠️ Cut into wedges & top with tomatoes. 💡 Reheat topped wedge in microwave for 30 seconds. Enjoy! Remember, I lost 67 pounds eating foods like this.
