I’m a big fan of mango sticky rice, so I started thinking… why not try it with jackfruit and sweet potato instead? ✨

For the savoury version, I used canned young green jackfruit in brine. This is not the ripe yellow kind. It has a neutral flavour and fibrous texture, so it works perfectly with a spicy, creamy, savoury thai red curry paste and fragrant coconut milk. The jackfruit soaks up all the flavour and is a great meat alternative!

I also wanted pretty rice so I steamed the sticky rice in two batches after soaking for a few hours: one plain white and one infused with butterfly pea for that beautiful blue-purple colour 💙💜

Then the sweet version: baked sweet potato brûlée sticky rice with a crackly caramelised sugar top, finished with a Thai milk tea coconut sauce to drizzle. It was creamy, comforting and definitely not your everyday mango sticky rice 🍠 fr you could easily swap and make sweet potato curry with yellow jackfruit dessert and this dish would still work 😋

I picked up the sticky rice, jackfruit and coconut milk specialty ingredients from SN Food Supplies in Truganina, who import a great range of Asian ingredients for recipes like these.

Would you try sticky rice with jackfruit and sweet potato? 👇

I’ve always loved mooncakes, but I didn’t love the dairy, eggs, lard, gluten, or refined sugar in them.

That’s why I created raw & vegan versions that are beautiful, delicious, and guilt-free. 🌙✨

These were naturally coloured with @my.blue.tea butterfly pea powder, pandan leaf powder and pink pitaya powder!

What a night of Malaysian flavours and wine matching at Dawning Day! 🎉🍷✨ Each course was paired with a wine from @dawningdaywines, and sharing that experience with all of you was such a joy, seeing your faces light up with every course meant everything to me.
From the Tuna Tataki basket, Pulut Panggang, Laksa Bomb, Roti Jala , Nasi Kerabu with Confit Duck Malay Curry and Taro Blue Butterfly Pea Flowers dessert , every dish carried a piece of my heritage, and last night you all embraced it with open hearts (and appetites 😄).
A huge thank you to my 3 capital Es; Erin, Eiolia and Elise ❤️Their hard work and support behind the scenes made the whole night possible. I truly couldn’t do this without them.
Thank you to everyone who came out and made it such a special evening and thank you @dawningdaywines for the perfect pairings! 🙏🏼🌿
More to come.. stay tuned!

Oats that taste like dessert 🤤 It’s got that nice purple sweet potato flavour and pretty colour, layered with Greek yoghurt “cream” and crushed biscuits for that tiramisu effect! I used a 5-in-1 oat blend from @thecollagenlab which tastes amazing and full of collagen goodness and other functional ingredients like creatine and prebiotics and probiotics!

UBE OAT BASE:
1/2 cup oats (The Collagen Lab Collagen Overnight Oats Blend)
1/2 cup milk
2 tsp Ube/ purple sweet potato powder @my.blue.tea
(Let sit overnight or for 2 hours in the fridge)

TOPPING:
1/2 cup thick Greek yoghurt + vanilla
Crushed biscuits
