Duck Leg - confit and grilled with raspberry vinegar sauce and Hakurei turnips. With a vinegar sauce inspired by Chinese three cups sauce using fresh raspberries from @rittmanorchards. The leg is cured, confit, cooled, and finished on the grill. Lacquered and seasoned with tellicherry peppercorn, coriander, chamomile, and garlic scape salt we made from @thaxtonfamilyfarm. Served with grilled hakurei turnips that are tossed in a black pepper and garlic oil. Summer is here @cordeliacle .

Rolling deep from Cleveland to Chicago with the @cordeliacle & @rosy.restaurant fam for another #jamesbeardawards week! Seeing our guy @chefvinniecimino nominated again was an incredible honor, but anyone who knows Cordelia knows moments like this are the result of a whole lot of people showing up every damn day. From the dishwashers and cooks to the servers, bartenders, farmers, and everyone behind the scenes, it takes a village to make this thing go. We didn’t bring home the medal this year, but the team being recognized among some of the best in the game is something we’re incredibly proud of and never take for granted. In between, we ate our way through Chicago @lulacafe @bokachicago @mr.beefchicago @middle__brow and plenty of other spots that left us inspired and ready to get back home and cook! Grateful for this crew, this city, and everyone who supports what we do. We’ll be back❤️ #midwestnicetakeschi

“Analytically we’ve won” 2 finals in 3 years, what an amazing ride. Sharing it with our team is the most special part of this all, we might not be brining home hardware; this time. But we are winners, because of the folks we are so lucky to spend our days with. I love you all, and I will always push to do better.

Pea Toast 🫛 One of our favorite spring rituals, returning each year with a slightly new expression. This season’s version features fresh spring English peas, hand-ground into a tartare and dressed generously with olive oil, lemon, black pepper, and copious amounts of parmesan. It’s paired with whipped ricotta and served atop of our house wild ramp focaccia. Finished lovingly with toasted macadamia nuts and fresh torn mint. A dish that’s grown with us over the years, and one of the clearest signs that spring has found its way back into our kitchen.

EVERY DAMN DAY This kitchen grinds. That french top is HOT. Our prep team starts early, our bakers keep these ovens full. The drive, passsion and decication of our culinary team is unmatched. 2x @beardfoundation finalist Best Chef Great Lakes, has a nice ring to it! Still in awe, and will forever be grateful for the opportunity. So exited for our teams @cordeliacle + @rosy.restaurant y’all are the real heroes! Thank you for pushing me each day to be a better leader, I wouldn’t be here without you! Thank you to my partner @cleveland2222 for always believing in me, even when you know I’m wrong. Most importantly thank you to my beautiful wife @ohsarah1983 for be my biggest supporter, never letting me give up, and dealing with all my bullshit, you will always be my reason for everything!
