DENVER DINING, BEAUTIFULLY REIMAGINED. ✦

Tucked inside one of downtown Denver’s most striking hotels, @pasque_denver at @populushotel_denver is where thoughtful cuisine, beautiful design, and a little understated luxury come together.

Set within the architectural beauty of Populus, a hotel honored with One MICHELIN Key in both 2025 and 2026, Pasque offers a dining experience inspired by Colorado’s changing seasons, with a menu celebrating locally sourced ingredients, creativity, and the natural world.

Under the direction of Chef Ryan Pearson, every plate feels intentional, beautifully composed, layered with flavor, and designed to be enjoyed slowly.

A few highlights from our evening:

✦ Savory Beignets | Delicate, savory bites filled with spinach, fall squash, and fontina, finished with chile honey.

✦ Badger Flame Beets | A beautiful combination of pistachio goat cheese, crisp Honeycrisp apple, sherry vinaigrette, and mustard frill.

✦ Smoked Trout Dip | Colorado rainbow trout with crème fraîche, fresh dill, and crisp potato chips.

✦ Buckner Lamb Shoulder | Rich, comforting flavors paired with butternut squash-tahini purée, farro, green olives, and pickled peppers.

✦ Steak Frites | Flatiron steak accompanied by pickled shallots, sauce Diane, braised rainbow chard, and delicate potato pavé.

And just when you think the setting couldn’t become more inviting, Populus has introduced something new.

Groove Lab with namebackwards + Friends transforms the hotel’s upper-level lounge into an intimate Friday evening experience, bringing together live, piano-forward performances, rotating Denver musicians, elevated cocktails, and a new selection of small plates from Pasque.

Picture warm lighting, beautiful music, thoughtfully crafted drinks, and the kind of atmosphere that makes you want to linger a little longer.

Fridays through November 20 | Music 6–8 PM | L2 at Populus Denver | 21+ | No cover or minimum spend.

For beautiful date nights, seasonal dining, and evenings that feel a little more special, this is a side of downtown Denver worth experiencing.

September... A month of wild contrasts.

Year 6 of @craft_colorado was smooth, vibrant, inspiring, and filled with friends and incredible artists. So thankful to everyone involved for all the work poured into it this year and all the years prior. @mighty_mutomo 's birthday was filled with all the activities and much fall beauty. Access Fund's 35th birthday weekend came a week after CRAFt. After supporting the planning for many months, it was a big hit!

And

Gus spent two nights in the emergency vet in very bad shape, but happy to report he is recovering well. I spent a fortune on a transmission fix for my car. I got stuck in an elevator en route to the Access Fund dinner. Burnout from all the events was upon me all month.

And yet

I was also surrounded and supported by many friends and community. Who showed up and showed out for CRAFt. Who donated to Gus's GoFundMe🙏🙏. Who dealt with my temporary insanity from it all.

So, thankful to all the humans and creatures in this life with me.

...now back to posting all these songs I've been sitting on. Thanks to all who have watched and liked and shared ☺️
