🎃Pumpkin Vegan Mac & Cheese 🧡🌱 Roasted Vegetable Vegan Mac and Cheese Yields: 3-4 servings Prep time: 15 minutes Cook time: 30 minutes 🧑🏻‍🍳 Recipe ⬇️ 📝 Roast the Vegetables: Preheat oven to 400°F (200°C). On a baking sheet, toss the pumpkin cubes (for the sauce) and the broccoli and red onion (for the mix-in) with olive oil, salt, and garlic powder. Roast for 20-25 minutes, until the pumpkin is very soft and the broccoli is tender and lightly browned. Remove from oven and let cool slightly. 📝 Boil the Pasta: Meanwhile, cook the pasta in a large pot of salted water according to the package directions. Before draining, reserve 1/2 cup of the pasta water. Drain the pasta and return it to the pot, but remove it from the heat. 📝 Make the Golden Sauce: While the pasta is cooking, place all sauce ingredients—the roasted pumpkin, the soaked (and drained) cashews, 1/2 cup of the pasta-cooking water (or plant milk), nutritional yeast, lemon juice, garlic powder, onion powder, salt, and turmeric—into a high-speed blender. Blend until completely smooth and velvety. Taste and adjust seasoning as needed. 📝 Pour the golden sauce over the cooked pasta. Add in the roasted broccoli, red onion, and peas (if using). Gently fold everything together until the pasta and vegetables are evenly coated in the creamy sauce. 📝 garnish generously with a sprinkle of pepitas, fresh microgreens, and a dash of chili flakes for that perfect final touch.
