Vancouver Chefs pres. ICON Vol. 3 | Disney at Kavita l May 11
@icondinners l @vancouverchefs l @restaurant.kavita

After the snacks, the menu opened with two courses inspired by films that helped shape Disney's legacy.

For Steamboat Willie, Chef Tim and Chef Tushar looked to Disney's first major animated film for inspiration. Presented on a white plate featuring the iconic black Mickey Mouse silhouette, the dish paid tribute to the film's original black-and-white aesthetic. @chefttushar l @timschultechef

Beneath a sepia crisp sat spot prawn, yuzu, orange, mandarin, shaved fennel, samphire, chili oil, and seaweed emulsion. Bright citrus, ocean flavours, and delicate textures came together in a course that celebrated both the Pacific Northwest and the film that started it all.

Paired with Le Vieux Pin 2025 Sauvignon Blanc.

The second course turned to Ratatouille, perhaps Disney's greatest love letter to food. 🇫🇷

Rather than recreating the classic Provençal dish, the chefs focused on the film's central message: exceptional ingredients treated with care. Spring vegetables, morels, nettle, foraged herbs, Comté, and egg yolk highlighted the beauty of the season and the timeless influence of French cuisine.

Celebrated the season today with friends at the tasty Festive Lunch @showcaserestaurant at @vanmarriott. (On til Dec 19, $55 +18%) Though everything was good, special kudos to the pastry chef as her selections were great. A light flavourful ube coconut cake, chia pudding, a very homemade tasting gingerbread and a citrus red velvet (my new favorite version!!) got onto my plate. Heard the Yule log was equally great!

Love seeing chefs collab taking pop-ups to the next level and that is what @_bartartare is all about. It’s a natural wine bar (that also offers zero proof wine and some are actual zero-proof) and rotating chefs almost nightly. This week it’s all about Indian and Peruvian dishes with these two local chefs collaborating @chef_alvarez and @chefttushar

As it is a wine bar, you can get a taster of something that may surprise you before committing to a glass. On reco, I tried the Zero-Proof L’Antidote, their fully non-alcoholic offering made with a base of unfermented Gamay Noir juice, infused with a blend of herbs grown between the vines, and gently carbonated.

On the food side of things, I had the healthiest Chaat I have ever had, it was the delicious Roasted Parsnip Chaat from Tushar.

Then had the Peruvian Aji Panca Braised Short Ribs which was lean and ever so delicious with cassava from Jefferson.

As I was dining with friends @citieguy and @natiherron I was able to have a taste of some other things that included the Corn Chawanmushi and Churros.

Stopped in to @sashimiyashop for some deluxe #chirashi #sushi and deluxe negiri sushi. Too early for the spot prawns that day sadly but.... Chef/owner @takayukiomi really no doubt has the best take out sushi in BC IMHO. So fresh and succulent, worth the cost.

Apologies to all the photog followers🤦‍♀️ These floating farmersalt crystal pyramids are hard to capture on an iphone.

Good news though 🌎
last week I started using solar evaporation as part of the farmersalt process-

so now your orders will be filled even slower 🤷‍♀️
