Prawn Mchuzi

Ok get this, I made this and my dad said it brought back memories of living and eating in Mombassa, and if that’s not a complaint I don’t know what is. (Excuse the plating i was HANGRY) 😋🤦🏽‍♀️

This was an absolute banger of a dish and its so simple, and flavoursome. I can guarantee you will not be disappointed.. Mchuzi in English means Sauce - so basically a prawn curry! 😋

Ingredients for Marinade:
•King Prawns Deveined
• 2tbsp Chilli Powder
•1tbsp Garam Masala
•Chopped green chillies
•1tbsp Coriander/Cumin Powder
•1/2 Tsp Tumeric Powder
•Few TBSP of Oil
•1/2 Tsp Salt
•1/2Fresh lemon juice squeezed

Mix all together and leave to marinate overnight or 3-5 hours before

For the Mchuzi…

Use this as a guide depending on how saucy you want your curry.

•6 tbsp blitzed tomato tin
•2tbsp Coriander/Cumin powder
•2tbsp of Nawabi meat Masala
•1 tbsp Garam Masala
•1tsp chilli powder
•Fresh coriander
•1 onion chopped
•1tsp ginger garlic paste
•1tbsp oil

1.add oil to a pan and add onions and garlic and mix until translucent
2.add the tomato paste and spices, and mix for a few minutes, if you want it a little saucy like mine add a tiny bit of water to get it to your liking
3.Cover for 5 mins and let the flavours infuse (keep mixing)
4.Try the sauce and add anything to your taste / Salt/Spice ( you shouldn’t need too as the prawns are marinated with lots of flavours)
5.Add your prawns and mix
6.Cover for 5-10 mins until prawns are cooked
7.Serve with Naan/Roti or Rice nice and hot 😋

1) Could we know a little about you & how long you have been running the Dog & Pheasant?

👉 My name is Dave Hall. Nigel Farnfield & I have been the leaseholders since 2008.

2) What do you love most about what you do?

👉 I just love making people smile & be happy. We have a great reputation for our food & service, but we are more than that. To our locals, we are a hub of the community & love the support we receive.

3) When did you realise the virus may have an impact on your business?

👉 I guess, when we were told to close on the 20th March. In the short term we were losing our busiest lunchtime of the year, Mother’s Day (on the 22nd). Next it was Easter, then the two Bank Holidays in May. Those are the days that make the rest of the year work for small pubs like ours.

4) How has your operation changed over the last 12 months to adapt to the various rules & restrictions?

👉 It's been a huge change for us in so many ways. Firstly dealing with closure, which we’ve never experienced before and then with all the COVID rules we had to put in place. It goes against everything pubs have been for centuries. Then we had the very welcome, but crazy Eat Out to Help Out scheme. I’ve never experienced a level of business like it. The change of weather and therefore the loss of our garden space in mid September hit us really hard. And suddenly we were locked down again in November, open again in early December and then stayed open (due to being in Waverley) when the rest of Surrey was closed, until we joined them on Boxing Day. And here we are..

5) Are you running takeaway during lockdown & how do we order 😋?

👉 We run a takeaway service every weekend and have recently added a delivery service for only £3, which is going incredibly well. The website to view our menu and order is www.dandp.takeaway.com 👨‍💻.

6) Vaccines are coming! What are you most looking forward to about reopening 🤩?

👉 Seeing people’s faces without face masks, hearing the buzz of our fantastic pub and my feet aching when I get home!
