The future of restaurants might be the most analog thing left.

That’s the case Chef @weeksinadaze made on a panel at The Gathering at @rtlodge yesterday: that in a world that keeps getting faster and flatter, a dining room is one of the few places still built for the unhurried, in-person, hands-on experience people are starving for. Not a threat to the industry. The whole point of it.

We’d seen the proof the day before. We drove to @bentonsbacon in Madisonville, where the smokehouse still runs the way it always has: smoke, salt, time, and someone who’s willing to wait. No shortcuts. There aren’t any. That’s the same spirit we’re chasing at Murray’s.

Grateful to RT Lodge and @trevorstockton for the seat at the table, and to Benton’s for showing us what optimism looks like when it’s aged 18 months.

Crawfish Wontons- Louisiana crawfish and cheese filling, roasted red pepper and absinthe cream sauce, black garlic bread crumb and pecorino cheese.

These have become THE dish to order on our 4 course tasting menu in our dining room which features heavy French Creole flavors, it really showcases the flavors of Louisiana and the 7 nations that make up the Creole culinary canon.

To the long time lovers of our Detroit style Philly… she’s back under a new name! You’re going to want to come get this Barbershop Philly for our weekly Hoagie Hoedown, Friday night at Canary Club, 6pm to sell out ✨

Also! Shout out to @thepostlouisville for keeping Poco fed on all of our busiest days. We always grab a South Pacific to fuel us while we are prepping our big catering jobs 🍻 so this is a little love letter in a Hoagie!

Chef Kenyatta will be serving his Ghanaian Red Red: stewed Sea Island peas, sweet plantains, avocado, and crispy coconut rice (V) (GF).
