Today, I’m introducing @nipcooks to Klepon—Indonesian rice cakes filled with liquid palm sugar! 🇮🇩🍡 They were bouncy, chewy, served warm, and the palm sugar filling exploded in our mouths. 🤯🔥 We absolutely loved them and devoured them in one go. So addictive! 🤤💚

But that’s not all—we also made Sri Lankan-style Chicken Curry! 🍛🐔 Stay tuned for the next video. 🎥✨

Klepon Recipe 🍡

Coconut Coating 🥥

✅ 125g dried desiccated coconut
✅ 1 pinch salt 🧂
✅ 1 pandan leaf (tied into a knot) 🍃
✅ 1 tsp water 💦

🌟 Steam for 5 minutes, then leave covered in the steamer while rolling the palm sugar balls.

Filling 🍯

✅ 75g palm sugar (finely chopped and shaped into small 3g balls)

Dough 🍃

✅ 100g glutinous rice flour
✅ 25g rice flour
✅ 125ml water
✅ 3 pandan leaves 🍃
✅ 15g sugar 🍚
✅ 1 drop pandan flavoring or green food coloring 🌿

Instructions 👩‍🍳

1️⃣ Blend water and pandan leaves until smooth, then strain. Measure the liquid and add more water if needed to reach 125ml.
2️⃣ In a pot, combine the pandan extract, 50g rice flour, salt, and sugar. Cook over low heat until thick and translucent. 🔥
3️⃣ Remove from heat and mix with the remaining flour. Be careful—it will be hot! 🔥 Start mixing with a spatula, then knead by hand until smooth. Add more flour if the dough is too sticky.
4️⃣ Roll and portion the dough into 15g balls. (TIP ✨ Keep the dough covered at all times to prevent it from drying out.)
5️⃣ Filling the Klepon:
🟢 Option 1: Start with a round ball, carve a hole in the center, add the sugar, and seal tightly.
🟢 Option 2: Flatten the dough, place the sugar in the center, and seal. If you can see the palm sugar, it will leak when boiling—so seal carefully! Unfortunately, it’s not easy to fix once that happens. 😅
6️⃣ Boil until it floats and coat with dessicated coconut! That's all! Be careful to not eat this fresh as the sugar might still be piping hot

SRI LANKAN MEAL 🇱🇰

We were inspired by @nipoopss to create some of his wonderful recipes this week. We made his chilli prawns, potato curry and beetroot curry and they all got the stamp of approval from our parents 🙌🏽

We’ve realised the importance of colour in our dishes and also that most dishes use very similar spices. If you have curry leaves, pandan leaves, onion, garlic and some curry and chilli powder you can make so much!

The sambola recipe is my mum’s one (see below). I have always been obsessed with sambola and would make it myself since I was a kid to take in a sandwich to school 😅

COCONUT SAMBOL
- shredded coconut (you can get frozen ones from the store/MKS)
- chilli flakes
- salt
- onion
- lemon
- Maldive fish

In a mortar and pestle, crush the chilli flakes, Maldives fish and salt until combined. Then add your diced onion and crush. Once it’s a paste add some off your coconut and crush. Then slowly add the rest of the coconut and mix with your hands, pressing the ingredients together. Add the lemon and more salt to taste. That is it!

If you’re after a wholesome dish that is simple to make, you need to try this Omelette Curry! This is my take on the recipe by @nipoopss 😃

Ingredients
- 6 eggs
- 1/2 cup of coriander, finely chopped
- 5 red chillies, sliced
- 2 medium sized onions, diced
- 6 cloves of garlic, finely chopped
- 1 tsp of hot chilli powder
- 1 tsp of paprika
- 1/2 tsp of turmeric
- 3/4 tsp of curry powder
- 1 can (400mL) of coconut cream
- 1/2 cup of water
- salt, to taste
- 1/2 tsp of sugar
- oil, to taste

Method
1. Whisk the eggs with a pinch of coriander, chillies and salt
2. Pour the eggs into some oil and once the omelette appears solid, flip it over into half
3. Cut the omelette into bite size portions ad set aside
4. In another pan, sauté the onions, garlic and chillies
5. Once the onions are translucent, add the spices, coconut cream, water, salt and sugar
6. Bring it to a boil and add the omelette pieces back in
7. Simmer on low for about 5 minutes
8. Reduce on high for another 2 minutes
9. Garnish with coriander
10. Enjoy!

This South Indian Pork Curry is super spicy and perfect for a quick weeknight meal 👌🏽🇮🇳 What a dish 😍

Keralan Pandi

Yield: 4 pax
Cook time: 45 minutes

Ingredients

900g pork
Salt
3 tsp black pepper
1/2 tsp turmeric
3 tbsp coconut oil
1 onion sliced
3 dried red chili
2/3 tbsp fennel
5 garlic cloves chopped
1 sprig curry leaves
7 green chilli chopped
1 1/2 large tomato chopped
2 tamarind seed extract
1 tbsp coriander powder
2/3 tbsp cumin powder
200ml thick coconut milk
100g green beans
Coriander
