End of an era. 🍕

Today marks the official end of my journey as an @oonihq ambassador. It’s a bittersweet moment, this journey started in 2017 with a Uuni 3 and a dream to master the craft.

Since then I've;
🍕Run my own commercial pizza offering
🏆 Multiple Pizza Chef of the Year awards
🏆 Accolades at the European Pizza Championships

I’m incredibly grateful for the last few years, from helping with product development to the excitement of global launches.
More than the gear, I’m thankful for the friends I’ve made and the incredible community we’ve built together.

I've spent a lot of time thinking about what comes next for me.
And for the first time in years, I am an independent voice. That means more unfiltered reviews, deeper dives into dough science, and exploring the wider world of pizza tech without limitations of being a brand ambassador

As such I’m officially open to new collaborations . If you’re a brand who wants to work with me, or if you follow a brand you think I should be working with tag them below or drop me a DM.

For now, it’s back to what I love, sharing recipes, tips, food porn and science that help you make better food at home.
Thank you for being part of the journey. 🥂

Big thanks to @tapaninaho and @darinag as always

FLOUR experiment day 🍕🧪

Two flours. Two methods.

Caputo (Pizzeria) X Molino Pasini (Soffio Medium)

Both flours have very different specs, so I treated them differently:

• Caputo (Type 00, W260–270, P/L 0.50–0.60) → Poolish, 72h in total.

• Pasini (Type 0, W265–285, P/L 0.45–0.50) → Autolysis, 60h in total.

By theory, both methods should allow each flour to shine, and visually 👀 , they totally did !!

Great oven spring on both 💨💨 Spectacular lift and high cornicione. Caputo puffed up a little higher, with more uniform leoparding and no oversized blisters 👌

But when it came to taste & texture ❓

Pasini was the clear winner 🏆

Softer chew, more tender bites, slightly nutty and grainy, with a balanced saltiness and gentle natural acidity from long fermentation 🔥💯💯

Even more interesting, Pasini’s dough held its texture over time ⏰ !!

Did a follow-up taste test 1 hour AFTER bake,
Pasini was still soft and enjoyable, while Caputo “tightened up” and turned noticeably tougher to chew.

Which would you choose❓❓

The classic Neapolitan Caputo puff or the long-lasting softness of the Soffio?
