Bean Trilogy – Final Stop: India 🇮🇳✨ Rajma Pulao
One pot kidney beans and rice dish

From the caravans of the Silk Road to the kitchens of India, this humble rice dish carries centuries of culinary travel. The word pulao traces its roots to the Persian plov, a fragrant rice dish that journeyed east with traders, travellers, and empires. From Persia (modern-day Iran), the dish travelled along ancient trade routes especially the Silk Road evolving across cultures into plov in Central Asia, palaw in Afghanistan, and eventually pulao in India, with each region adding its own spices, ingredients and cooking traditions.

In this final chapter of my Bean Trilogy, I bring together hearty rajma (kidney beans) and aromatic basmati rice in a comforting rajma pulao ,a dish that beautifully reflects how recipes travel, cultures connect, and flavour has no borders.

Ingredients:
1 can red kidney beans (rajma),
1 cup rice (soaked 30 minutes and drained)
2 tbsp ghee or vegetable oil
8–10 black peppercorns
4–5 cloves
2–3 green cardamoms
2 bay leaves
1 inch cinnamon
1/2 tsp cumin seeds
2 medium onions, sliced
1/2 can tomatoes 1 tbsp tomato puree
1 tsp turmeric powder
1 tsp coriander pd
1/2 tsp cumin pd
1/2 tsp chilli pd
1 tsp garam masala
2 tbsp fresh coriander leaves, dill , chopped
Salt to taste
21/2 cups water

Method
Heat ghee /oil in a pressure cooker and add the whole spices. Sauté for a few seconds until fragrant. Add the onion and cook until golden.

Stir in the tomatoes and tomato purée and cook until the oil begins to separate.
Add the powdered spices and mix well, then stir in the coriander leaves and kidney beans
Add the rice, salt and about 2–2½ cups of water. Mix gently.
Pressure cooker: Close the lid and cook for 1 whistle, then turn off the heat and allow the pressure to release naturally.

Without pressure cooker: Cover and cook on low heat for 12–15 minutes, or until the rice is tender and the liquid absorbed.
Fluff the rice gently, garnish with fresh coriander and serve hot.

Bean Trilogy Ep 2
This time the humble kidney bean takes us to Afghanistan, Qorma e Lubia, a comforting Afghan stew slowly simmered with onions, tomatoes, gentle spices and dried mint. The dish has a thick consistency and is traditionally eaten with rice . This combination is known as Lubia Challow.

Afghanistan has long stood at the crossroads of the ancient Silk Road. Along these routes travelled not just silk and spices, but also culinary ideas, cooking techniques and words.
There are so many similarities between this dish and the Indian cousin Rajma - the style of cooking beans in spiced gravies and serving them with rice reflects culinary exchanges between Afghanistan and North India shaped by Silk Road cultures.

Taste this dish and it feels like the first cousin of Indian rajma curry. Both are slow-cooked beans in a fragrant onion-tomato base, layered with warming spices and served with rice.
Another fascinating fact - across Afghanistan and parts of the Middle East, lubia simply means beans. In North India, the related word lobia refers to black-eyed beans , a small linguistic echo of centuries of exchange across these regions.
Hope you enjoy this delicious dish.
