We spent a day with chef Des Harris @thereal_desharrischef on his day off cooking at the @nzicc . He talked the whole way, about his grandma’s kitchen, the years he gave to restaurants, and what he would tell a young chef starting out.

Three things we took from the day:

1. Keep it simple. Good food is a great ingredient and three things on a plate that belong together.

2. Put in the time, and cook with good chefs. There is no shortcut to the hours.

3. Know what it costs. Des is honest about what the work took from him, but ultimately gave him by way of wisdom, technique, and pure love for the craft and act of hospitality to those in and outside of work.

Thank you, Des, for giving us your day. And thank you to @mtcook_alpinesalmon for backing the film and allowing us to celebrate a chef that has truly been an influential voice in the culinary scene here in Aotearoa for so many years.

An Evolution of Memory. 🌊🔥

Every dish tells a story, and this one tells mine.

Inspired by the aromas of prawn curry from my childhood kitchen, this dish brings together my Indian roots, the flavours I grew up with, and the beautiful seafood of New Zealand.

Crispy Stuffed Squid with Prawn Mousse, Spiced Crab, Coastal Hāpuka and Harissa Coconut Emulsion.

Incredibly proud to be representing New Zealand as a finalist at the S.Pellegrino Young Chef Academy Competition 2026–27 Pacific Regional Final in Sydney.

A special thank you to my mentor, Chef @cheffyp , for his guidance, encouragement and belief in me throughout this journey.

I’m equally grateful to the incredible teams at @skycityakl and @nzicc for their ongoing support and for being part of my culinary journey.

Thank you @sanpellegrino_aus and @sanpellegrino_youngchef for this incredible opportunity.

Looking forward to meeting the other finalists, learning, and giving it everything I’ve got.
