Though it might be Tuesday, it feelt like Sunday in bed. Coffee brewing, a breakfast tray and everything captured on film ☕️

Your witch is back! and she’s cooking mushroom chicken pasta for the girlies 👩🏼‍🍳

CREAMY MUSHROOM CHICKEN PASTA🍄‍🟫
(Serves 4)
• 400 g pasta
• 500–600 g chicken breast
• 400 g mushrooms, sliced
• 1 yellow onion, finely chopped
• 1 tbsp butter or olive oil
• 5 tbsp concentrated mushroom stock
• 1½ dl dry white wine
• 5 dl cooking cream
• 1 tbsp soy sauce
• 3 tsp fresh thyme
• Juice of ½ lemon
• Salt and black pepper

Sauté the onion in butter or olive oil until soft and glossy. Add the mushrooms and cook over medium-high heat until all their liquid has gone out

Add the mushroom stock and white wine, then simmer until reduced by half. Pour in the cream and soy sauce. Add the thyme, lemon juice, salt and pepper, then let the sauce gently simmer while the pasta cooks.

Season the chicken with salt and pepper, then fry it in a little oliveoil, butter, fresh thyme and lemon until golden

Cook the pasta until al dente, saving around 1 dl of pasta water. Toss the pasta through the mushroom sauce, adding a splash of pasta water. Slice the chicken and serve on top.

HOMEMADE PESTO

• 4 dl mixed fresh herbs
• 1 dl roasted nuts and seeds
• 1 small garlic clove
• 1¼ dl olive oil
• ½ tsp salt
• ¼ tsp black pepper
• 1–2 tbsp lemon juice

Blend everything until slightly chunky, adding a little more olive oil if needed. Dress your favourite seasonal salad with lemon, olive oil, salt and pepper, then spoon plenty of pesto over the top.

Creamy, cosy and the perfect autumn dinner 🤎

Send this to someone you want to cook this for you—or save it for dinner this week!

P.S. It is even better the next day, so make extra for the perfect lunch/dinnerbox
Kisses 💋

Ambassadør dag hos Ole Lynggaard i Hellerup 🤍🌿
