There’s zero guilt in eating chicken nuggets when you know exactly what’s in them. 🤌🏼 (recipe below)

Meat
•500 g minced pork
•1 tsp salt
•1 tsp garlic powder
•1 tsp cayenne pepper
•½ tsp black pepper
•1 tbsp cornstarch

Coating
•½ cup breadcrumbs
•1½ tbsp cornstarch
•same spices used for chicken
•in a separate bowl beat 1 egg

Method
1. Don't flour them first. Dip each nugget lightly in beaten egg.
2. Immediately press into the breadcrumb + cornstarch mixture. Use your fingers to press a thin layer onto the surface.
3. Let them sit for 5 minutes so the coating adheres.
4. Fry in about 1–2 cm of oil over medium-high heat until golden and crisp, roughly 3–4 minutes per side depending on thickness. I use @omegapressery avocado oil 🥑
5. Drain on a wire rack, not paper towel, so the bottom stays crispy.

Enjoy 💛

Amazing Avocado oil @omegapressery 💚 🥑

A great versatile oil that can be used for many things!

I love the smooth buttery flavour and it’s not overpowering.

Elevate every dish with the power of avocado 🥑

My new favourite toast combo: smashed egg, avocado, cottage cheese with some onion - and a very generous dollop of my @thewoolfskitchen Chilli Crunch with avocado oil.

Who else is in?

A taste of @tasteoflondon 🌶️

A day in the life of a food business owner.

Taste of London is such a brilliant event and so many of my food business friends were exhibiting this year. I only had an hour in a very busy day, so this was a speedy whip round to catch up with everyone!

Stopped by @alldressedupdressings who were sampling their delicious dressings (and making a smacked cucumber salad with my @thewoolfskitchen Chilli Crunch 👏).

Also caught up with the teams at @tibatempeh , @aagrahfoods (check out their actual 🐘), @mixtons , @ronib_kitchen and @omegapressery.

If you’re heading there this weekend please go check them out!

And next year? I’d love Woolf’s Kitchen to be there too.
I’ve said it now... watch this space.🐺🌶️

Being independent, and supporting independent, are central to our company ethos.

It’s why @meerkatworks support independent challenger brands founded by the brave humans that believe their product can disrupt the category they are entering. Because here’s the thing. We can save the Founders time & money when it comes to their marketing.

It’s why @heidi_carroll shops at @stockbridgemarket and buys her veg from @ovenstone_organics. It’s why when Heidi met Nikita, the Founder of @omegapressery last week at @breadjamfest, she bought Avocado Oil for the first time in her life.

Thank you @annaschreiner for not only prepping the Tomato salad but doing the ‘1st Pour’ Everyone at the table agreed the Avocado Oil was absolutely DelishPot.

@omegapressery - Deliciously Independent- just like @meerkatworks

A massive thank you to everyone that joined us at the Startup Summit this week! 🚀

We had such a great day. It was incredible to be in a room full of such passionate founders and entrepreneurs at the start of their journeys 🤩

Thanks to you and our lineup of inspiring speakers, the energy in the room was unmatched.

And a huge shoutout to our Pitch Perfect winner James, co-founder of @stokedfood!, who delivered a standout pitch on-stage 👏

Lastly, thank you to our amazing sponsor @gs1uk, who are also headline sponsor of the Bread & Jam Festival in July 🙌🎉

Speaking of... Early Bird tickets end at midnight!! Link in bio⏳
