Wasn't sure if Gippsland stocked some of our fav items we've found around Central Victoria these last 6 months. So we stocked up @16beachgeneralstore before we left the Mornington Peninsula. There are ZERO preservatives in all of these products according to @yuka_app Minestrone Veg Soup @thewholefoodkitchen.au We couldn't make one as tasty as this. Fresh Pasta @otwaypastaco The best fresh pasta we have tried on our trip so far (and boy have we tried a few!) Wagyu Beef & Pancetta Lasagne @mealsbymarci I have been back multiple times for it. Salted Butter @lardassbutter Also a HUGE fan of their Garlic & Herb Milk @schulzorganicdairy Best part is you can return the bottle for $3! Also a big fan of @inglenook_dairy Sourdough Crumpettes @millettroadmaker Meant to get the Rosella Flour ones, interested to see how the Spelt Wholegrain compare! When purchasing easy pre-made meals, we search to find locally made products with ZERO peservatives. Often we wouldn't be able to replicate the dish as well ourselves for the effort required. Life on the road brings many an unplanned delay, but we try to keep our nutriton up and avoid crappy take away (although we've had a few of those too!) Yes, pre-made meals with quality ingredients are more expensive than options at Woolies or Coles, but MUCH tastier and fresher, with a homemade taste and CHEAPER than going to a restaurant... plus you get to enjoy the comfort of your without having to worry about who is driving home. The Rooster & The Vine 🐓🍇 Crispy Chicken Thigh Rigatoni with Red Wine Pickled Grapes & Basil Pesto Ingredients • 400g @otwaypastaco rigatoni • 4 chicken thighs, skin on (or your preferred cut) • ½ jar basil pesto • 1 handful red grapes, halved • ¼ cup red wine vinegar Method Red Wine Pickled Grapes Place the halved grapes in a bowl with the red wine vinegar and leave to pickle while you prepare the remaining ingredients. The grapes will develop a sweet, sharp flavour that cuts through the richness of the chicken and pesto. Crispy Chicken Thigh Season the chicken thighs and cook skin-side down over medium heat, allowing the fat to render slowly until the skin is golden and crisp. Turn and cook until the chicken is cooked through, then rest. Reserve the chicken juices and any crispy bits from the pan to add extra flavour to the pasta. Rigatoni Cook the rigatoni until al dente, reserving some of the pasta water before draining. Add the pasta to the pan with the reserved chicken juices and a splash of pasta water. Fold through the basil pesto until the rigatoni is evenly coated and glossy. Drain the pickled grapes, discarding the excess red wine vinegar, then stir the grapes through the pasta. To Serve Top the rigatoni with the crispy chicken thighs.
