I’ve been having fun experimenting in the kitchen lately. Aside from coming up with new ways to serve all the beautiful fresh produce and herbs we’re getting right now, I’m working to come up with ways to add summer-fresh flavors to our table when the cold weather sets in and decides to stay. This beautiful #fattoush vinaigrette is my favorite creation so far. It started with a quick salad I made recently with Persian cucumbers, tomatoes, red onions, and feta, and evolved from there. I tossed some of the salad with s&p, fresh thyme, oregano, and a couple mint leaves; then set aside to macerate for an hour. Once it began to release its juices, I puréed the mixture with 2 cloves fresh garlic, 1 1/2 tsp. anchovy paste, juice from one lemon, 1/4 cup EVOO, a pinch of #redpepperflakes along with 1 tsp. Dijon mustard, and 2 teaspoons of za’atar. Oh, the fragrance. Oh, the FLAVOR! The perfect dressing for fattoush, or to serve as a dip for fresh veggies. Or maybe to drizzle on lamb meatball #gyros instead of tzatziki. And here’s even better news: I hadn’t known that cucumbers would freeze well, but it turns out that they do. So I will be creating more of the base for this vinaigrette this month while the veggies are fresh. I’ll purée it, then freeze it to use later on. I love it when things like this just kind of happen, don’t you? #vinaigrette #saladdressing #saladsofinstagram #saladrecipe #Food52 #thefeedfeed #foodpics #zaatar #middleeasternfood

ROASTED LENTILS. They’re going to be game changer! In my last post I shared that I had discovered a huge stash of #confettilentils during my most recent #pantrypurge Since rediscovering them, I’ve been concocting ways to use them - ways that have nothing to do with hearty fall or winter #lentilsoup So today I decided to roast a batch of them. Not sure exactly where I’m headed with them now, but it will be fun to figure it out. And after all, isn’t having fun in the kitchen what it’s all about? Especially when your work can produce such interesting results.

First I cooked 4 cups of dry lentils until #aldente After letting them stand for a while to soak up some of the leftover juices, I drained them well, spread them on a baking sheet, seasoned them with thyme, granulated onion, and S&P; then roasted them for 40 minutes in a 350 degree oven. Have to say, I LOVE the way roasting the lentils intensified their flavor and how the process created a delightful chewiness beyond what I was able to achieve through cooking them until al dente. Now I’m looking forward to sharing with you what happens next. Like I said, I have no idea right now what that will be, but I know it will be fun! #funinthekitchen #somethingnew #reallygoodfood

#371/750🔥 Saturday 27th November 2021. This was another great munch.
Gloucester Old Spot Sausage 🏴󠁧󠁢󠁥󠁮󠁧󠁿 Banh Mi 🇻🇳. Used a tiger baton and Ardennes Coarse Liver pâté with garlic 🇧🇪. Great pâté that. And a side of Filipino style chargrilled eggplant 🍆 🇵🇭.

•Grilled off some Italian meatballs which I had later with spaghetti 🍝 for dinner 🇮🇹.
•Grilled some S+P chicken thighs in anticipation of making a creamy dish @ourwildsavorykitchen .
•Roasted a small piece of pork belly for Cantonese Siu Yuk 🇭🇰which I planned to give to my friend but didn’t get to meet up so I cut a piece to try the next day and I think they would’ve enjoyed it: still crunchy crackling the next day.
•Was lucky to be gifted some Malaysian Curry Puffs 🇲🇾 to try. Firstly they were beautifully made. The filling more like you would get in a samosa rather than the style my grandma’s bakery used to make which was more meaty made with corn beef! Nonetheless Malaysian curry puffs are delicious.

This Savory Scalloped Apple dish just kind of happened as I was working on some new recipes for #oktoberfest. Believe it or not, the idea didn’t start with apples; it started instead with Cambozola cheese. Cambozola is a triple cream, brie-style blue cheese made in the German region of Allgäu. With its savory, nutty flavor, it’s a natural with apples. I started by sautéing Granny Smith apples and diced onions in some browned butter. Once the onions were transparent, I tossed the mixture with some vanilla bean sea salt, ground #tellichery peppercorns, pure maple syrup, fresh thyme, fennel fronds, cinnamon, caraway seeds, a little cayenne pepper, and chopped roasted walnuts. I spooned the mixture into individual tart pans, ladled a creamy mixture of the cheese and some milk on top, sprinkled the dish with more walnuts, and finished it all off with a dusting of Turbinado sugar. Baked at 350 degrees until bubbly and golden brown, about 40 minutes. I was delighted with the result, especially when I realized that this little dish would be perfect as either a side or a savory dessert. And even better, it’s great for breakfast, served with sausages on the side. How about you? Are you making anything special for Oktoberfest this year?

I first posted about #popcornshoots a couple of weeks ago. Since then I’ve received so many questions about how to grow them that I thought it was only fair for me to share my method with you. It’s so easy to do, and can be done inside anytime of the year. Popcorn shoots are an easy way to add fresh flavor to dishes all year long. From using it as an herb sprinkled on top of fruits or vegetables, to adding the shoots to sauces and soups; to my favorite way to use them in pesto, I think you’re going to love this addition to your repertoire. My method is below. If you have any questions, please feel free to DM me. Meanwhile, if you grow popcorn shoots for yourself, I’d love to hear about your experience.
.
.
.
Place 4 cups popcorn kernels in a bowl. Cover with water to about 2” above the kernels. Soak for 8-12 hours, then drain and rinse carefully.
.
Line a deep aluminum pan with 3” of soil. Spread soaked kernels in single layer on top of soil.
.
Cover pan with foil and place in a cool, dark location. Once a day, remove cover and lightly spray sprouting kernels with water. Continue this process for several days until the shoots have grown above the tip of the pan (5-6 days).
.
Move pan to an area with filtered light. Water with 1-2 cups of water, pouring it gently along the inside edges of the pan. Be careful not to overwater.
.
Shoots till be ready for harvest in 10-12 days.

I first made this cooling Yogurt Tahini Sauce to serve with #falafel But when everybody raved about how good it was in it’s own right, I decided to branch out and use it for other things, too. These days I keep a batch on hand to enjoy as a dip for all the fresh vegetables we’re bringing in from the garden. We also love it with fried cauliflower, or wings; as a simple spread for toasted pita; as a flavorful addition to my lamb or chicken meatballs. I even use it to make a creamy #vinaigrette It’s so good that I could eat it by the spoonful straight out of the bowl. And so easy! Just blend Greek yogurt, tahini, garlic, fresh lemon juice, cumin, salt, and white pepper. Let stand in the refrigerator for a couple of hours to let the flavors come together, and there you have it! How about you? do you have any versatile, go-to dips and sauces that you know you can depend on anytime? I’d love to hear about them if you do.
