My advice when you’re looking for the best coffee in a city: ignore what’s trending.

Find the barista who understands what you’re looking for. The roaster doing exceptional work. The place that feels inseparable from its neighbourhood.

Philly has plenty of all three.

This guide captures what makes the city’s specialty coffee scene so good: it’s independent, varied, deeply local and far more interesting than it gets credit for.

Comment PHILLY and I’ll send you the link.

Who would you add to the list?

Coffee shops nationwide are offering classes to everyday enthusiasts. Experts say it’s indicative of a surge in countertop espresso machine ownership — and a clever way to diversify revenue. I loved working on this piece for @phillyinquirer / @phillyinqfood and getting to zero in on my own ‘spro game (stretching milk is hard, give all baristas a zillion dollars!). PARA SIEMPRE
*Long ahh caption warning*
Even though, we’re celebrating on Saturday, today is officially 10 years of Paratodo. What a better way to make me feel old af than to do a little dump of some memories throughout the decade. Over the last 10 years, there have been a mix of both enthusiastic determination and impending dread, high-Highs while battling profound lows, and great friends both new and old accompanying me along the way. Looking back on this time has made it difficult to remember what it was like before launching the brand (probably developing Alzheimer’s). It has played such an integral role in not just my life but also in the friends who’ve helped build it, the fans who’ve supported it, and all of the relationships made through it. For those reasons, it’s also hard to imagine to ever calling it quits. The next decade could be a disaster, but this first one has been some of the greatest years of my life. No amount of thanks can describe my gratitude for that 🥹

Ok, now that I’m done being sappy, we decided to make a free newsprint that recaps some old/unreleased artwork along with imagery throughout the last decade for Saturday’s event. There are a limited amount, so you’ve been warned. Also, there’ll be some exclusive 10-year anniversary merchandise available.
To rsvp, please follow the link in our bio. See you Saturday!

Chibanos process - my first time developing a coffee/tea program, which was super fun and interesting. Our tea is sourced from @imperialteacourt , the first traditional Chinese teahouse in the US. @oxcoffee has a great balance of flavor for our yin yeung, a milk tea with espresso and our café Cubano. Before Evan found the home for @chibanos_philly, I developed a recipe for bolo bao but it didn’t end up making the cut with the limited space in the kitchen. @thedodobakery now makes their amazing bolo bao in the perfect custom size for our breakfast sandwiches. A breakfast sandwich feels very “American” and an important part of building this menu was to explore what it means to be multicultural and multiracial in this country and in our own personal journeys.

Some items like the papas rellenas didn’t make the cut for the final menu because the labor involved would have been unsustainable for our very busy and very small kitchen. We found a different way to use the picadillo in sandwich form, with cheese and crispy taro sticks and still were able to highlight a dish that Evan’s mother cooked for him as a child.

Most the photos in my phone over the past few months have been of measurements of equipment related stuff during build out and I haven’t taken much food photos so photo credits due to Nicole Guglielmo for the Infatuation and Jessica Griffin for the Inquirer.

Building a restaurant that is a sustainable and healthy workplace takes a village. We’ve been blessed with a great team, collaborators, neighbors and families. Our regulars are all super cool people. Evan is a kind and supportive owner who really cares about the well being of the space and the people in it. My incredible husband @mr_dmz helped with coffee, FOH and listens to me yap while giving me constructive advice.

Working with people from diverse backgrounds who have a story to tell is my favorite type of work. Challenging people’s perspectives on authenticity and belonging, developing spaces that represent the underrepresented and providing a place where guests can see aspects of their own lived experiences is what I feel good food should be about.
