Everything in the kitchen begins with Mis En Place.

Why? Because cooking moves quickly. If you’re still chopping ingredients or disorganized while the pan is hot, you lose time and things start to burn.

When everything is ready beforehand, you can focus on timing, technique, and cooking efficiently — which is how chefs make full meals in under 30 minutes.

Good cooking isn’t about complicated recipes. It’s about good preparation.

I hope you’re taking notes. See you in class next week!

Lesson 01: Why Your Food Is Sticking

When protein (like chicken, steak, fish, eggs) hits a cold or dry pan, the protein molecules bond directly to the metal surface.

But when you:
✅ Preheat the pan properly
✅ Add oil after it’s hot
✅ Let the crust form before flipping

…those bonds break naturally once the food sears.

That’s why chefs say:
“If it’s sticking, it’s not ready.”

The crust releases itself when it’s done.

Let me know what you want to learn in next weeks class in the comments.
