We’ve learned to celebrate ingredients that are not indigenous to our land and to take pride in dishes that aren’t always part of our own culinary identity.

Too often, I see Caribbean chefs—and Jamaican chefs in particular—proudly promoting premium cuts of Angus and Wagyu on restaurant and hotel menus. These names carry value because generations of farmers, butchers, chefs, and industries have developed, standardized, marketed, and celebrated their cattle.

But what about our cattle?

Jamaica has its own breeds, including the Jamaica Red, Jamaica Black, and Jamaica Brahman—cattle developed on our own soil and adapted to our environment.

What if we gave them that same attention?

What if our farmers focused on improving beef quality, our butchers broke the carcass down into internationally recognized cuts, and our chefs prepared those cuts with the same knowledge, technique, and respect they give imported premium beef?

Instead of seeing our local cattle simply as “local beef,” we could begin building value around their breed.

Imagine visiting Jamaica and ordering a beautifully prepared Jamaica Brahman or Jamaica Black steak—an experience connected specifically to the island and difficult to replicate anywhere else.

That is how we create value.
That is how we create identity.

We had the best time having @pastrychefjeff and @stephaniemnzl in town last week!! Jeff and I competed together on Next Level Baker and it was so much fun to show he and Steph my bakery and introduce them to OKC! It only felt right to end the evening at @ramsayskitchen where we had every single dessert and a little @gordongram photoshoot at the end. 😂
Let’s do it again soon!

Here’s a little bts of each of my Next Level Baker finale friends!
🧁 Pic 1- We had an impromptu @dominos pizza party after the finale. It was the most beautiful way to wrap up the wildest experience of our lives. We laughed, we talked, we debriefed, and we crashed, bc that finale was WILD!
🍫 Pic 2- @pastrychefjeff and I discovered pretty quickly we were both early risers, breakfast eaters, and coffee drinkers. Jeff dubbed us the Breakfast Club™️ and we started each day with this sweet, little routine. Jeff is not only incredible at what he does professionally, he is also a one of a kind baker and creative!! He was such an encourager during the competition and spent so much time building everyone up…truly a gem!! 🫶
🍰 Pic 3- @bakewithzoha is an incredible recipe developer, blogger, social media STAR and mother!! She is fierce, brave and beautiful and I absolutely loved getting to see the incredible bakes she brought to the competition. It has been such a joy to see her shine. Love you, friend! ✨
🍪 Pic 4- @chloejoysexton is literally one of a kind. She is 🔥 in the kitchen, a wildly amazing boss lady and I feel like I’ve learned so much from her. She is an inspiration not only as a business owner and social media phenomenon, but also as a mother and wife. I’m so thankful to count Chloe as a friend and if you haven’t ordered her cookies, the 👏 time 👏 is 👏 now! @chloesgiantcookies
🍮 Pic 5- @deirdra.sweets4dayz (left) is one of the coolest people I know! If you follow her, you know her desserts not only look insane, but her voiceovers are soooo soothing and her photography is 🔥. She is beautiful, talented and creative and I seriously cannot wait to see where this journey takes her. Love you, girl!! 🫶
👑 Pic 5- @absolutelyediblecakes Nikki is a QUEEN. She is fierce, kind, gracious and an incredible business owner. She was there for me when I was feeling worn down and overwhelmed and she absolutely knocked this competition out of the park. Also, her Sweet Potato Thang cannot be matched! 😘
