A taste of Sally Barnes’ visit with our 6-week students, sharing over 45 years of knowledge from Woodcock Smokery in West Cork 🐟

Sally began smoking fish in 1979 as a way of preserving the wild Atlantic catch and still works exclusively with wild fish today.

From the extraordinary life cycle of wild Atlantic salmon to curing, salt, wood and smoke, there was plenty to learn.

And a rare treat of beautiful fresh mackerel, hot-smoked with the students 🔥

A little about last night….

Years ago, a bad experience with a snobby wine instructor completely put me off wine. Thankfully, my dear friend @patbbrowne gently guided me back into the fold, and now I’m finally ready to dive back in—this time in the wonderfully capable hands of Amy. She is truly fabulous, passionate, and incredibly knowledgeable!

Attending my very first Wine Club at @thewinecentre.ie in Kilkenny was such a joy. Most importantly for me, it felt like a safe, welcoming space to be a total beginner.

I walked away having learned so much—from island wines and native yeasts to organic grapes, minimal intervention, and the beauty of indigenous varieties. Here’s to the start of a much better journey! 🥂✨
