🍃Cozy, historic inn
🍴Complimentary breakfast for hotel guests

POSTS STORIES REELS TAGGED

Went into the garden yesterday to checkout the possibilities of dinner for my guest arriving today. Stuffing the squash blossoms with tuna is one of my go to in the last few years. I love the light and crispy texture with the fresh tuna.
I have to admit searching through the leaves to see the blossoms ready for picking is one of my favourite things in the garden. It’s kind of the same as pulling up the perfect carrot. So I wanted the same experience for my guests. This was my way of creating it.

PS. The server made it to the table without losing a single plate! 🙏👌🏼❤️

What a fun and fantastic collaboration dinner with Chef Shawn Adler! I originally met Chef in Mexico earlier this year and had some of his amazing food. For the last couple days, the students and I have been working with Chef Adler to get ready for our big dinner last night. I always look forward to the transfer of knowledge back-and-forth with my indigenous, brothers and sisters. The real win was for the customers and the students. I’m looking forward to another collaboration dinner with him in the new year in Ontario.

Great weekend of shows! Nice to go up to NB for a quick trip for @lchullabaloo and stop in #hartland to walk through the world's longest covered bridge. Stopped in Digby on the way for the annual Scallop Days festival, then we took the ferry over to Saint John. Gorgeous day to be on the water! And then of course we had a wonderful crowd at @troywolfville on Friday. Couple more shows coming up this summer!

Let me know which plating style you prefer.

Often, the setting, the number of courses, or even the client can influence how a dish should be presented.

At the core, the goal is always to let the ingredients shine.

In the first plating, I wanted to highlight the relationship between the salmon and the peas—clean, fresh, and contemporary in style.

In the second, the setting was Parlee Beach on a beautiful summer evening. Other courses included quahogs and lobster with thoughtful pairings. So, I leaned into the environment, using beach-inspired ingredients to complement the salmon and bring out contrasting textures and flavors. The experience was meant to evoke the feeling of dining right on the shoreline

Practicing pizza this morning while patiently waiting between sourdough folds—every 40 minutes like clockwork.

Working with Neapolitan-style dough today—easily my best batch yet. Still not fully satisfied (when am I ever?), but it turned out light, crisp, and beautifully foldable. Quality ingredients really do make all the difference.

Learning the nuances of the wood-fired oven is both a challenge and a privilege—especially knowing I’ll be teaching with it.

I may be the teacher, but more than anything, I’m always the student—constantly learning, exploring, and creating.

What an amazing life I live 🙏
