Snap peas are the crisp, crunchy stars of spring! 🌱These sweet, edible-pod peas are part of the legume family and are a cross between snow peas and green peas. You can enjoy them raw, sautéed, stir-fried, or tossed into salads, grain bowls, and noodle dishes! 🥢Their refreshing snap adds texture and a ton of nutrients!

Just 1 cup (98g) of raw snap peas delivers:
🛡️ 98% daily vitamin C – Boosts immunity and helps your body absorb iron
🦴 22% daily vitamin K – Supports bone strength and heart health
💚 Fiber – Aids digestion and promotes a healthy gut
🌱 Plant-based protein – Fuels energy and supports muscle repair
🧬 Antioxidants (flavonoids + carotenoids) – Reduce inflammation and protect your cells

💡Snap Pea Tips:
✨No need to shell—eat the whole pod! Just trim the stem end and pull off the tough string if needed.
🔥Snap peas cook fast. Add them during the last 1–2 minutes of stir-frying to keep their crunch and vibrant color.
🍋Pair with lemon zest, mint, or chili flakes to brighten their natural sweetness.
🧊Drop snap peas in boiling water for 60 seconds, then plunge into ice water to lock in that vivid green color and keep them crisp for cold dishes.

First all my Indian friends please forgive my borrowing the name Peas Pillau for a dish which is by no means a classic.
The flavourings are very similar but the cooking technique is different as well as the fact that this made with quinoa not rice. It is none the less a starry side dish to eat with other Indian spiced dishes.
The world of spices and foods for me is now so available that I m not constrained by what is produced locally. I wanted something with a higher nutrition content than rice hence the quinoa which is definitely a vegan superfood. I then found I got a more interesting result when I pre cooked the quinoa so I used a stir fry method to make the pillau, starting with the whole spices.
At a Friday night Feast we all agreed it was a bit of alright. Check my website - thevegqueenarises.co.uk - for more ideas on mixing food cultures.

When I need something green and summery, frozen peas are an instant solution. This is the ultimate standby vegetable that brings a vivid burst of colour and taste to the plate.
The key to success is defrosting the frozen peas so that there is no need for much cooking. This preserves the colour and it tastes really good and fresh.
The great thing about frozen peas is that unless you pick your own and eat them straight away, their flavour is often superior to the flavour of fresh ones which are often a couple of days old when you buy them.
Servings - 4
Special Equipment - A blender of food processor
Ingredient
450g defrosted peas
a small handful of fresh mint leaves roughly chopped,
1 tsp ground coriander/optional
salt and pepper
unsweetened plant milk as required
How To
Tip all the defrosted peas and the other ingredients into the food processor or blender and blitz til you have a smooth puree.
if you want a softer puree, add a splash or two of plant milk.
Just before serving, warm the puree gently in a saucepan.
