Making truffle crusted sea bass 🐟

Leek and Potato base:

3 medium potatoes, diced
1 leek, white part only, thinly sliced
1 shallot, diced
Thyme + 1 bay leaf
1 glass white wine
Vegetable broth
½ cup heavy cream
Salt + white pepper
Oil or butter

Sauté shallot, leek & potato in oil or butter. Add thyme and bay leaf, then deglaze with white wine. Add vegetable broth, salt, white pepper & cream. Simmer until the vegetables are tender and the liquid is creamy.

Truffle crust :

2 slices bread, no crust
1 stick butter, softened
1 tsp truffle paste
1 tbsp truffle oil
Handful toasted pine nuts, chopped
Pinch of salt

Blend everything in a food processor until a paste forms. Roll thinly between parchment paper and freeze until firm.

Fish:

2 sea bass fillets
Salt + oil

Season and sear the fish in a hot pan. Cut the frozen truffle crust to fit the fish and place on top.

Bake at 400°F / 200°C for ~8 minutes, until the fish is cooked and the crust is golden.

MEU DEUS!

O resultado? Um novo vício! Sai sexta e sábado na Fofo, viu? 👀🍩
