1 large onion – chopped
2 carrots – chopped
2 celery sticks – chopped
2 garlic cloves – chopped
150mls red wine (2/3 cup)
400g tin of chopped tomatoes
1 beef stock pot
2 bay leaves
2 sprigs of thyme
1 tsp dried oregano
Salt and pepper

To serve:

600g cooked pasta and grated parmesan.

Method:

1. Brown the beef chunks and set aside.

2. Fry the carrots, celery, garlic and onion on a low heat for about 5 minutes.

3. Add all the ingredients to your slow cooker and cook on low for 7 hours. When done, shred the beef and stir into the sauce. If the sauce needs thickening pour it all into a pan and simmer to reduce or cook on high in the slow cooker with the lid off for another 30 minutes.

4. Combine with the cooked pasta and serve with plenty of grated parmesan.

Save this if your ready to fully embrace autumn with Welsh beef slow cooker stew and dumplings 🍂

Full recipe below…

The @pgiwelshbeef braising beef just falls apart after hours in the slow cooker and the trick to getting dumplings to rise in a slow cooker is to put a tea towel under the slow cooker lid and cook on high for an hour - without peeking!

What’s your go to autumn dish?!

Serves 6

Ingredients:

Stew:

2 tbsp vegetable oil
1kg braising steak – chopped into chunks
2 tbsp of seasoned plain flour
2 onions – chopped
4 carrots – chopped
2 large parsnips – chopped
6 cloves of garlic – minced
Few sprigs of rosemary and thyme
2 bay leaves
1 tsp Worcestershire sauce
500mls brown ale
1 beef stock pot
Salt and Pepper to taste
Fresh chopped parsley to serve

Dumplings:

150g self-raising flour
70g beef suet
1-2 tbsp fresh chopped parsley

Method:

1. Toss the beef chunks with flour, seasoned with salt and pepper. Add 1 tbsp of oil to a frying pan on medium heat and brown the beef in batches and set aside.

2. Add the rest of the oil to the pan and fry the onion, carrot for 7-8 minutes, add the garlic and continue to fry for a few more minutes.

3. Add all the stew ingredients to the slow cooker apart from the parsley and cook on low for 7 hours.

4. Around 6 ½ hours in make the dumplings. Put the flour, suet and parsley in a bowl. Make a well in the centre and add 3 tbsp of water. Stir to combine and continue to add 1 tbsp of water at a time until it comes together in a soft dough. This usually takes around 3-4 tbsp of water. Divide the dough into 8 balls and put on top of the stew. Turn the slow cooker to high and cook for 1 hour.

5. Serve with buttery mash and top with some fresh parsley.
