The 17th Annual Pig Island NYC may have come and gone, but we’ll be thinking about each and every one of those BBQ bites for a very, very long time.

Not only did we have the most perfect weather, but we got our first Food Karma Projects’ Triple Crown!! 🚨🚨🚨

Here’s the rundown of the winners:

🏆 Best In Show: @brothersbarbecue, who are also the Triple Crown CHAMPS (won Rib King NYC AND Brisket King NYC)
🏆 Best Whole Hog: @holycityhog with an assist from Ben Hooper of @bensbackdraftbbq1
🏆 Friends of Firefighters People’s Choice Award: @kamraithai

This past weekend, history was made at @pigislandnyc, with @brothersbarbecue winning Best In Show and completing the “triple crown” following wins at @brisketkingnyc & @ribkingnyc. They won with excellent NC-style whole hog sliders and apple cider donut pork belly burnt ends. It’s a whole new era for the Farella brothers and they’ve also got a steakhouse on the way.

The Underhogs Award: @sweetlewsbbq of Charlotte, N.C., for its whole hog, spare rib, and sausage

Veggie Island Award: @david_vitola86 & @heritagefarmnyc, for incredible grilled vegetables and pork

All in all, this was one of the nicest days we’ve ever had at Pig Island and the good vibes were felt all around.

Part 3/3 of my @pigislandnyc recap - The fun thing is to try everything and decide on your own favorites.

Like @kitchentime_kev had one of MY top 3 bites despite not getting an award. So it's a great reminder that taste is highly personal at the end of the day

This man used like 40 different ingredients and prep methods so I would love to highlight what I can (next slide)

1. Cherry and Oak(iirc) smoked pork collar - I could taste the sweet smokiness coming off the pork alone. I took a very small bite of the part with nothing but the pork. Fantastic bite already and super tender

2. A scotch bonnet pickle blend - not spicy but great tang, flavor, and acid

3. Chicharron with crispy shallot and garlic - your crunch factor with tons of herbaceous vampire repellent powers

4. The glaze is Chef's own twist on a chinese pork belly sauce and with the @mikeshothoney twist adding a thick layer of sweet spicy

5. The cilantro and scallion blend for the cherry on top for a different earthy herbal taste

And this all blended into a bite of happiness with the soft pork, crunchy chicharron, and just layers and layers of flavor

This team is like an avengers style of awesome people coming together for BBQ.

I am also totally biased because I use Pork Mafia rubs myself as well because it saves so much time as a person with many hobbies and they're very affordable everyday rubs and sauces

A little bite of everything. So many not one bite but each bite is perfection.

I got a ton of earthy bitterness upfront that melded so well with the pork's natural flavor and made the savory and umami levels in turn explode with just a hint of sweetness at the end. Plus the crackling skin was just bliss in a bite.

@mumskitchensnyc - A fan favorite that had a massive line. They actually sold out so make sure you beeline to them at @ciderfeasthq on October 3rd.

I came too late and everything but the samples sold out. My friend and I had a bite before I took a photo. Freaking delightful as always.

It’s the first Football Friday of the season as the Bears get ready to kickoff against the Carolina Panthers. Let’s celebrate by making “party ribs”.
Thanks to @jasonpruitt35 for tips & suggests. And a huge Thank you, to @philwingo for the awesome @porkmafia dry rub and sauce. Go Bears! @chicagobears @webergrills #weber #ribs #beardown #nfl #bbq 🏈🐻⬇️

Recipe:

Two racks of baby back ribs, membrane removed and cut into individual bones. Season each side of the ribs with dry rub of choice. Set up grill for direct heat. Grill ribs for one hour at 275°, flipping and spraying with apple juice periodically. Remove the ribs from the grill and place in an aluminum pan. Cover ribs with sauce of choice and add 1/2-3/4 cup apple juice to the pan. Cover the pan with foil and return to the grill and cook at 275° for 1.5 hours. Pull the pans off the grill, then place the individual rib bones back on to dry them out slightly. Cook for 20-30 minutes at 275°. You can also serve them right out of the pan.

Bear Down & Smoke Up: Oven-Baked Ribs for Ultimate Boneless Rib Sandwiches

Getting these baby back ribs dialed in for some epic rib sandwiches I am testing

I used my homemade functional barbecue sauce as the binder and packed on the flavor with Pork Mafia
Memphis Mud seasoning.

Low and slow in the oven until they're melt-in-your-mouth tender.
