I love carrots, but why I thought it was a good idea to buy a five-pound bag I’ll never know! If you love carrot cake, you’ll love these carrot cake muffins. I always bake my muffins at 425 degrees because I get a nice muffin top every time.

Side note: I bought the granola @delraygreenmarket from @lauriespantryofficial - so good!

Ingredients:

· 2 cups self-rising flour (all purpose is fine too)
· ½ cup sugar
· ½ teaspoon salt
· 2 teaspoons baking powder
· 3 tablespoons butter, shredded
· 1 cup unsweetened almond milk
· 2 cups shredded carrots
· 2 large eggs
· ½ cup granola

Instructions:

1. Heat oven to 425.
2. Mix the flour, sugar, salt, and baking powder together. Using a box grater, grate the butter into the dry mixture and combine.
3. Add the almond milk, carrots, and eggs and mix just until combined.
4. Divide mixture between 12 muffin cups, divide the granola on top of the batter, pressing slightly to stick to the batter.
5. Bake for 15 minutes. Let cool for 5 minutes before removing.

5 @ww points each with sugar, 3 if you use a no calorie sweetener. 🥰

Sending. Over. Sips.
Tropical 🥥🍍🌴 sips, in honor of all my Northern peeps submerged in snow. These may resemble snow, but I’m confident they are some type of coconut beverage. Mine will be alcohol free because it’s #dryjanuary but I can still daydream. Cheers!!!🍹

Make it colorful! These are the only Christmas pieces left gracing my condo. I’ll be celebrating at home tonight. Maybe I’ll break out my leopard 🐆 pajamas! What are your plans?
