New Dish: Halibut | Pumpkin | Saffron

I wanted to create a dish that spoke to me of Fall.
Fall has always been my favorite season—from the warm spices and seasonal fruits and vegetables to the aromas in the air and the beautiful contrast of colors.

After hearing that @mauiprimefinefoods is closing, I stopped in to show my support and came across this gorgeous, fresh halibut. I knew I had to create something special with it.

Pan-seared halibut finished in brown butter and fresh thyme, paired with brown butter sous vide pumpkin, cooked at 185°F for 1.5 hours, and finished with a delicate sauce made from saffron.

Simple ingredients, seasonal flavors, and a touch of elegance. Sometimes, the most beautiful dishes are the ones that let the ingredients speak for themselves

Since The August 8th 2023 lahaina wild fire every chef on maui and state gave back to our wonderful community. For myself and chef zach to reach this milestone is part of our life journey, and the reality is food insecurity is here on our islands to stay with the growing economy, over priced housing, over priced produce and goods being shipped daily, and the struggle to find a meal for our families.

Huge MAHALO to our sponsors and the Local people helping get these meals out every week! Again thank you and see you guys soon!

New Dish Alert : Textures of Carrot.

The concept was simple, zero waste. We seeded these carrots 9 weeks ago for the purpose of using them at the Grand Taste @kapaluawine.

I took the tops and made a carrot leaf oil which turned into a sauce. Peeled the carrots and used the skins for pickling. Took the root to sous vide at 185 degrees. Took those scraps for a Carrot Sponge and a carrot & Vanilla bean puree. Accompanied with the addicting seed crumble.
