Yesterday I made this delicious lentil potato soup from @plantbasedonabudget I followed the recipe, except I used minced ginger and cumin powder. It was so filling and savory, the only change I would make is next time before I blended it I would pull out most of the potato chunks with a slotted spoon, because we really loved the few chunks that were left, but there weren’t enough! I may even boil some extra potatoes to pop in before eating the leftovers!

And with that, our 2026 @dietitiansofmarriedtohealth retreat comes to an end! We ate, we learned, we embraced a #GutBased lifestyle, we adventured, we were nourished, we mingled, we LAUGHED, we danced… all in the name of being the best team possible to wholeheartedly show up for all of you!

It was such a pleasure getting to tag along with my friend Carleigh Bodrug from @plantyou for part of her Quickies book tour! I’ve had a front row seat to so much of the work that went into this book, and I’m incredibly proud of everything she’s accomplished and how many people she’s reaching with it. ❤️

While we were in LA, we also managed to eat very well! We checked out @loveinweho in West Hollywood, then made our way to Venice for @the_butchersdaughter and @cafegratitude . One of the highlights was an influencer event for Quickies at Our Place in Venice, where we got to spend time with so many people we’ve followed online. It’s always fun when internet friends become real-life friends!

I loved getting to be there for this chapter and celebrate Carleigh and Quickies along the way. If you haven’t picked up a copy yet, you can find Quickies anywhere books are sold! 📚

I got to join my friend Carleigh from @plantyou and her family for the first leg of her book tour for her new cookbook, Quickies! 📚

The weather was windy, rainy, and not ideal for exploring, but we made the best of it and packed so much into our time together. We toured a museum, ate our way around the city with stops at @libertybagelsny, @anixinyc, and @colettanyc, @anitagelatousa, and even got to catch up with our literary agent, @wendysherman.

We ended the trip with an absolutely beautiful dinner hosted by @eatbanza to celebrate Carleigh and Quickies. They served some of their new penne pasta, and it was absolutely delicious!

I’m so proud of Carleigh and everything she’s created with this book, and I loved getting to be there to celebrate such an exciting moment with her and her family. ❤️ More to come from the LA leg!

Halfway into Flirting Lessons by @jasminepics I realized side characters probably had a story of their own. I googled and discovered that I actually own the book featuring the side characters.😅 I haven’t read it yet, but I will.

Flirting Lessons was cute. I’m glad I borrowed the audiobook from the library. At one point, a character is trying to cultivate some hobbies and community, and she starts working in a community garden with a new friend. They end up with a lot of zucchini and mentioned making zucchini bread, so made some zucchini muffins.

@plantbasedonabudget had an easy vegan zucchini muffin. The muffins were fine, if you like that sort of thing. My household vegan ate quite a few, but the children who prefer things with chocolate didn’t eat many. I don’t think that is the recipe’s fault.

📚Have you ever accidentally read a series out of order? Luckily this is a series of standalone romances, so my oops wasn’t a big deal.

It made me sweat and made my nose runny. This Sick Day Soup from @plantbasedonabudget was exactly what I needed today, when I’ve been under the weather. My clogged sinuses thank you 🤧

This soup is reminiscent of chicken noodle soup, but made completely plant-based. The “secret” must be in the 1/3 cup ginger and equal volume of hot sauce. Since I used Mama Sita’s hot pepper sauce (labuyo)—which is much more potent than typical hot sauce in North America—I used a smaller amount. It was still 🌶️🌶️ 🌶️

To make it even more nourishing, I added some baby bok choy (any greens you have handy will do).

I made Edamame Salad (from @plantbasedonabudget ) to go with dinner tonight:
Edamame, Corn, Black Beans, Tomatoes, Cilantro, Red Onion, Salt & Lime Juice.

This is marinating in the fridge for tonight but the taste test was excellent! I did add extra cilantro & Edamame because we had them to use up!
