This garlic is called Gido. My Grandfather smuggled it into Canada in his pant cuff when returning from an agricultural exchange with the Ukrainian (behind the iron curtain!) decades before i was born. My Uncle and brother have been breeding ever since. Thanks to David whiteside and the fabulous ferme Abbondanza for growing this for me. Obviously I will ferment the hell out of it! Family-caught Venison seasoned with @fromthewildca Big Game Spice, the braising liquid in the pressure cooker with the seared game- a cup of @legendnaramata gin, honey and heirloom tomatoes, garlic cloves and scapes. Served with all the taco fixings including rainier cherry white peach heirloom salsa, and smoked scape salt roasted shishito peppers. I'll share the full recipe and techniques on journal today. Served with @thwines rosé and Cabernet Franc, plus had some @kanazawawine Raku (Syrah Viognier) . Good times with @thwines and @merawine - so many farmers in this dinner too! It's the height of market goodness these days 😍 @amaziafarm @unearthedfarm @medleyorganics @alesha_nicole_ @plazmo

Heavenly good smoked scape salt from @plazmo's Naramata garlic farm on roasted padrones with apricot bourbon honey sauce and chèvre basil dip. #whatgrowstogethergoestogether - The bourbon is @okanaganspirits #brbn made with okanagan grain 🌾 😍 the organic fruit and veg - #vintageharvestfarm
