Quando finisce Ein Prosit ci si sente sempre un po' orfani...
Grazie a tutti quelli che ci hanno fatto vivere questi meravigliosi quattro giorni, non solo cibo e vino, ma molto, molto di più ❤️

Long queues. Food trucks. And some of the world’s finest chefs cooking their signature dishes right in front of you. 🔥

No elaborate tasting menus. No fancy dining rooms. Just incredible food, made by the chefs themselves.

This is Ein Prosit. And the queues tell you why. 👨‍🍳

Nemmeno nelle idee.

#ChaseSapphirePartner | another faraway places dinner is in the books. this time, @chasesapphire reserve cardmembers got to experience a collaborative feast between chef @prateeksadhu of @restaurantnaar, all the way from the himalayan foothills of india, and chef paul carmichael in the kitchen at @kabawa.

the night opened with seabream in coconut stew, followed by rainbow trout with radish foam, served with bread and cultured mountain butter. next came spiced pork belly with rice pancakes, a standout bite of the night, and braised lamb with native rice. to finish, guests enjoyed a chocolate dessert with corn ice cream made with corn brought over from india.

thank you to chef prateek and the naar team for bringing a taste of the himalayas to kabawa, and to everyone who joined us. one more faraway places dinner is coming next month, so stay tuned.

This is by far my favourite night of the year. But this year, it was a full weekend.

Met friends. Ate some really good food. So good that I forgot to click pictures. But the comfort bowls from the panel had me! From Bihar’s litti chokha to Himachal’s pumpkin chutney and malpua, it was a ride and more.

And the award night! Chefs cheering for each other. The Goa gang pushing each other into the limelight. Top rankers making space for each other. Hugs. Endless hugs. An after-party that needed another after-party.

It was what the CNT Top Restaurant Awards always set out to be. A love letter, or maybe a long, emotional voice note, to the industry we love to love. And I wouldn’t have it any other way. ❤️

Some moments are worth looking back on.

Although I couldn’t be present at the Condé Nast Traveller @cntravellerindia Top Restaurant Awards this year, my heart was full to see so many familiar names being recognised.

Over the years, I’ve had the opportunity to photograph some of the most humble people and places with extraordinary stories and from being chefs in front of the camera to becoming friends. Seeing them celebrated is a reminder of the many inspiring conversations, experiences and journeys along the way.

From touring across India with team @dhamakanyc @chefchintan @roni.mazumdar of @unapologeticfoodsnyc to figuring out art at the salon of @restaurantnaar with @prateeksadhu and @aashinakaul to being hosted by the most helpful @abhishekhonawar at @thejohrijaipur over just a phone call, doing one of the most early portraits of @chefhussainshahzad or pulling an all nighter with @latoyahtrindade at @bandraborn , photographing features, cook books and their launches for @sonalved at @masquerestaurant with @varuntotlani and sharing milestones with @chefavinashmartins and @tizlynmart over pre Christmas celebrations at their home and farm. Moments like these make me realise awards and recognitions don’t happen overnight, it’s sheer hard work, overcoming self doubt, starting grounded and giving your 100% every single day until you make it.

Grateful to have documented a part of this evolving dining landscape.

Congratulations to all the winners!
