Okay, I need to talk about last night. Primrose Executive Chef Patrick Benton opened up his kitchen to Chef Anthony Jones of Marcus DC, and it kicked off The Hidden Mise, a new dinner series at Primrose celebrating chefs who trained in Michelin-starred kitchens and are now running the show at their own spots. If this dinner is any indication, we are so in. We started with Parker House rolls in nori bay leaf butter (umami!) and beef tartare tartlets piled with dry-aged wagyu, then moved into a wahoo crudo swimming in soursop leche de tigre, a tropical, fruit-forward spin on classic Peruvian ceviche. A tomato and strawberry salad with pepita salsa macha came next, all those flavors and textures combined so beautifully. And then the dish of the night: a grain risotto made from Manifest grains, einkorn, oats, and rye, stirred together with a creamy turnip butter and turnips. Unreal. We closed things out with a corn custard and blueberries, all while our good friend, wine aficionado and Primrose owner, Sebastian Zutant kept the reds coming, including a funky Devium Pinot Noir Pet Nat and a Calvez & Bobinet Pineau d’Aunis blend. Chef Benton trained under Eric Ziebold at Kinship and Métier and at minibar, and led Kiln in Alexandria before landing at Primrose. Chef Jones is a Maryland native who came up through Restaurant Eve, Marcus Samuelsson’s Red Rooster Overtown, and Dirty Habit DC before taking the helm at Marcus DC. Two serious talents, one incredible evening. More Hidden Mise dinners are coming to Primrose, so stay tuned.
