Fuegos Storytelling Time 🔥
Just back from Brazil, where I was invited to cook for my good friends—really, chosen family I’ve known for years at a self-sustaining food forest in the mountains of Serra do Piloto, Mangaratiba, Rio de Janeiro. A stunning place tucked inside a forest preserve, with a pristine waterfall running through it and crops growing in abundance throughout the property.

I cooked over open fire, or as we call it in Brazil, cozinha a lenha—bringing the Caribbean to Serra do Piloto with a fusion-style stew—ensopado (moqueca vibes), made with coconut milk, pumpkin, collards, jiló, inhame (known as yam in the Caribbean), and banana-da-terra, along with other fresh ingredients harvested directly from the food forest. Everything was seasoned with hand-pounded tempero using a traditional wooden pilão—or pilón, as we say in the Caribbean. Served with fragrant basmati rice, Fuegos signature inhame fritters with fresh herb garlic sauce, and artisanal Cuban tamales made from fresh organic corn and pumpkin, wrapped in corn husks—a savory reflection of Brazil’s pamonha.

My sous-chef for the day? Avó do Sítio—the grandmother of the property, holding it down with joy, jokes, and pure kitchen wisdom. She said she came to learn from me—but the truth is, we were learning from each other the whole time.

And then there was Seu Antonio—the neighbor who grows and produces his own coffee who also provided the firewood, shared stories, and happens to be an artisan master craftsman. I commissioned him to make a large, tree-trunk-style pilão/pilón, perfect for pounding bigger batches of tempero the ancestral way. Check out my stories to catch the reviews!
