Greetings @fermenting.cultures family!

We did it! 👏👏👏 Our first experiment fermenting with raw Senegalese honey, gifted to us from the lovely folk @proux.uk! This was our first time fermenting any kind of honey, so it has been a wonderful learning experience. 🐝🐝🐝

We wanted to make a refreshing drink to help us cope with the London heatwave. We chose some African flavours to complement the raw honey, which has a distinctly tangy, smoky flavour. Our ingredients were moringa, orange blossom essence, ginger, and lime. 🐝🌿🍊

This ferment was easy to make, but did need more watching than usual, as we didn’t know how the honey would affect the fermentation time or flavour. The result, a many layered flavour – sweet and smoky from the honey, floral from the orange blossom, tangy from the fermentation process. Pure joy!

The process took just under 2 weeks including a second ferment of a couple of days in the fridge, which allowed the fizz to develop. We also tried it diluted with sparkling water, which was so refreshing! There’s super-hot weather in London right now. So, fermentation times will vary depending on your environment; best is to keep tasting and watching your ferment. DM for recipe 😊

Shout out to Imana and her team @proux.uk; this was a blast! 🔥🔥🔥

Greetings @fermenting.cultures family!
I love when an unplanned day turns into something special. Yesterday, Kundai and I met up at Papa’s Park @papaspark in Brixton (it’s a gem!). The plan was to sample together the latest Fermenting Cultures experiment, a fermented drink made with raw Senegalese honey @proux.uk, ginger, lime, orange blossom, and moringa (it’s so good!).🍹🍹🍹

We were lucky to catch our dear friend Valcie @valciesflavas, who runs the park café with her partner Hurley. They make THE BEST Jamaican food – we devoured ice cold sorrel to drink, jerk chicken, vegan veg curry, plantain, rice and peas.

We spent a joyous afternoon eating, drinking, and scheming in the warm shade. Soul music and kids playing providing an intermittent soundtrack. 🌳🌳🌳

As we were saying our goodbyes, the topic of fermentation came up (it’s never far away!). Valcie mentioned that she ferments. Despite knowing her for the best part of ten years, I was unaware.

We were soon swapping ferments; us, our moringa and honey drink; Valcie, her fiery, cho-cho, carrot and red pepper pickle that she serves with fried fish. Plus, we got to see a vintage Roots Tonic from her collection. Oh, joy! We will be back. ❤️❤️❤️

One of my favourite things about hosting The Mum Club is meeting incredible local businesses that genuinely add something to your motherhood journey 🥑🍊💦

@proux.uk joined us recently with their beautiful wellness bar, serving fresh, nourishing juices that were exactly what we all needed on a warm summer’s morning 🍃

Created with thoughtfully sourced ingredients, including Senegalese honey, each juice is designed to support wellbeing from the inside out - and judging by how quickly we all snapped them up, I’d say they were a hit! ✨

I’m so pleased to say Imana will be joining us again at our Mum + Baby Reformer Pilates morning, bringing the wellness bar back for another chance to refuel, recharge + connect.

Supporting local brands while creating memorable experiences for our mums is what it’s all about 🫶✨

One off juices + subscriptions head to her website and use code MUMCLUB10 at checkout to claim your exclusive offer 💌
