Happy Tuesday 😊 if you are looking for an ultimate dining destination in Southbank, with the perfect pairing of Tasmanian produce and stunning river views @puresouthdining is the one to go. We have the pleasure of savouring the bespoke seasonal tasting menu curated by chef Ben last Saturday.

🩵 wild mushroom & celeriac dumpling, shiitake broth, spinach, kombu
🩵 Huon Valley Wallaby, rye flatbread, beetroot, Vegemite, King Island Dairy ‘Surprise Bay’ cheddar
🩵 East Devonport white fish, jalapeño, borlotti bean, fennel, beurre blanc
🩵 Midlands Cressy lamb rump, lentil, swede, turnip, burnt apple
🩵 poached quince, financier, Tongola Farm goats curd mousse, vanilla, lemon sorbet
🩵 Anvers dark chocolate, coffee, caramel, chantilly cream, vanilla ice cream

🩵 We dined at Pure South upstairs dining room a few times, food is consistently delicious using the best seasonal Tassie’s produce straight from the farms to their kitchen. The tasting menu we had this time is very playful in terms of the ingredients and flavours.

🩵 The soft rye flat bread topped with tender wallaby tartare and the combo of Vegemite cream and beetroot is so interesting. The contrasting malty, salty and sweet sensations are wild but works wonderfully.

🩵 As for the fish course, again the combination of flavours is really creative. The succulent pan-fried cod sits on top of the acidic fennel jam cuts through the buttery Jalapeño beurre blanc and leaves you with a hint of chilli kicks.

🩵 The soft financier with tiny poached quince balls, the macadamia, the creamy goat curd vanilla mousse already is delightful to eat. The lemony sorbet certainly enhances the lightness of the dish.

🥂 2014 Moorilla ‘White Cloth’, Tamar Valley, Tasmania
🍷 2021 Glaetzer-Dixon ‘Mon Pere’ Shiraz, Coal River Valley, Tasmania
🥂 2020 Pressing Matters ‘R139’ Riesling, Coal River Valley, Tasmania
🩵 Thanks Aaron for introducing us to these interesting Tassie wines. They all paired nicely with the food. Aaron has an eclectic collection of 200 fine wines on the menu from Tasmania and around the world.

🩵 Share with your friends and enjoy a gourmet tour of Tasmania
