The thing that puts me off making the very best pizza dough? It just takes way too long. 48 hours of fermentation? Mate I’m way too impulsive for that I want some pizza tonight. Not to mention the lobsters that I caught aren’t gonna keep so good until then. So I set about crafting the most practical pizza dough recipe I could. Still with a poolish, still with a little ferment and still with the primo airy, elastic and crunchy crust of the best. Then I put it all together with a little lobster butter to create a pretty indulgent little snack. If you want the full free guide for making the bases comment “dough” and all I send it to ya. The recipe for the pizzas is also in there.

BANANA BREAD WITH CHOCOLATE CHIPS!

This is always on request at home and one that I’ve shared here before, but instead of using cacao nibs I decided to make it more desert like by using chocolate chips instead. This is not your average banana bread this one is so yummy with a mix of cinnamon, ground clove, and chocolate! It’s so good you are going to want to save this for later to make on repeat! I love it toasted with almond butter. It’s sooo good! It’s also delicious served hot with a scoop of good vanilla ice cream and a good drizzle of caramel sauce on top!

Ingredients:
2 or 3 overripe bananas
2 large eggs
200ml greek yogurt
325g plain flour
200g soft brown sugar
I¼ teaspoons baking powder
I teaspoon bicarbonate of soda
 2 teaspoons cinnamon
1/2 tsp of ground clove
1/2 cup of dark chocolate chips add as much or little as you like.

* Preheat the oven to 170°C and line line loaf tin. I use my Kitchen Aid to make this but you can do it by hand or an electric mixer. Mash the bananas. While the bananas are being mashed in the mixer. I like to measure and prep all the wet and dry ingredients so they are all ready to go. Once the bananas are mashed, add the eggs one at a time. Followed by all the wet ingredients, and give it a good mix. Slow the speed down and add the dry ingredients, a little at a time. Then add chocolate chips and give it another quick mix. Pour into to your prepared tin and bake for approx 45-1hr or until a cake tester comes out clean. Cool banana bread in tin until cold, then wrap in foil.

Recipe for the Date swirl biscuits

🌙 Date Kifle —

Dough

250 g butter, softened
1/2 cup caster sugar
2egg yolks
2 tsp vanilla
Plain flour ( one cup at a time till you reach cookie dough consistency/ approx 6-8 cups)
1/2 tsp baking powder
4–6 tbsp milk, only if needed

Mix and create into a ball of dough. Divide evenly enough to create a square the same size as shown in my video

Date filling

500 g pitted dates
4 tbsp orange blossom water
2 tbsp butter
1 tsp cinnamon
1 tsp vanilla
Process with a stick blender to get a smooth finish
¼ cup finely chopped walnuts (optional)
(let it cool completely. You can make a day ahead)

To finish

Icing sugar, generous amount for dusting

Method

Cook the dates, water and butter over low heat for 3–5 minutes, until soft and paste-like. Stir in cinnamon, vanilla and walnuts. Cool.
Beat butter and sugar until creamy. Add egg yolks and vanilla.
Mix in flour and baking powder. Add milk gradually only until you have a soft, workable dough.
Divide
Put a small amount of date filling at the wide end and roll each
Bake at 180°C fan-forced for 20-25 minutes, until lightly golden underneath. (add extra time if not golden)
Cool slightly and coat generously with icing sugar.

For a really beautiful bakery-style finish: dust them once while slightly warm, then give them a second generous dusting once completely cool.
