wow! every year we just can’t believe how quickly @scoopsandiego comes and goes. this event is so near and dear to my heart. finding a way to give back to the community has always been the most important pilar in our set of values and this day is all of that. all of the funds raised get donated to @feedingsandiego, one of the most meaningful nonprofits benefitting this city. we pour so much time and energy to making our little booth at the event a special place for you all to stop and get a little ice cream. we are so grateful so many of you stopped by. we just love this day and already can’t wait for next year!!! thank you @rabble.face @marissa.willingham and @shellytapps for bringing this wild vision to life.

rarrr! posting about what we do always feels so scary and so i procrastinate until i feel so stressed that i haven’t posted in forever and i get to the point where i feel the whole world has forgotten we exist. haha it’s ludicrous, but i know that at least one other creative person out there shares this fear of mine, I’m sure of it. this stuff is hard.

at the @toryburchfoundation fellowship last week, i had a little breakthrough. i realize i have been so afraid to tell our story because this business is so tightly wound to my soul. putting myself, this business, in a place where my little soul is out in the world for anyone to critique feels unbearably scary. it feels like risking my identity. as I sat in the room with beautiful, passion-driven women i started to feel less scared. all of these women took a risk to follow their dreams and build a business not because the p+l told them it was a good idea, but because they believed in themselves…and they are all crushing it.

i have never not believed in little fox. we have chosen the hard path every time because we knew it was the right path *for us*. I chose to make our ice cream from scratch because it was how i could best represent the product I wanted to make. it was the way i could build an ice cream company where we could make exactly the ice cream we wanted to make without compromising a thing. everyone told me i was crazy-stupid even, and there were *easier* ways to do things. they were right. but luckily I found the most amazing people like @radpika and @rabble.face who knew I was crazy but were willing to take the leap of faith and build this thing with me.

so now i am putting my big girl pants on and i am going to be brave. i am going to start telling you about our ice cream…all about it. and all the incredible things we do to make our product. I will share with you the ways it is different to what everyone else makes, and i will learn to be ok with the fact that not everyone is going to like what we do. i hope you follow along

if you told us you haven’t tried this flavor yet, i don’t know we could believe you. the second we listed So Doughp (pronounced ‘so dope😂) on our menu, it immediately made its way to the top-seller list.

everyone asked for cookie dough ice cream-heck! it’s definitely my childhood favorite, but we knew if we were going to make it, we’d have to do it little fox-style. i couldn’t help but think about how my favorite cookies in my adult life, are the salty-yet tangy sourdough discard cookies my sister @mkgoldmonster makes for us when we visit her on the east coast. but how could we get that flavor in our ice cream?! for that, we called on @blackhatbreads and begged Terry for his auburn loaves of pure heaven.

terry knows what he is doing. actually…he obsesses over it. he blends five different wheat flours, kneads every loaf by hand and practically names each one. why? because Terry knows, just as we do, that food, truly good healthy food, starts and ends with care.

we couldn’t be more grateful that Terry agrees to let us use his bread in our ice cream. we know So Doughp wouldn’t be the same without it!!

did you know that we pasteurize our own ice cream base?

you may not know what that means, but basically it is a process the cooks our ice cream in a very controlled environment in order to ensure it is safe to eat. this process is pretty time consuming and arduous. it is also tightly regulated by the state. it is a process that is not necessary to making ‘homemade’ ice cream, …so many ice cream shops intelligently opt out of this step and buy a base that is already made specifically for them. so why don’t we follow suit?!

well, that is a great question, and one that i argue regularly. we are in this business for the craft of ice cream. and in order to control the very product that we have put at the center of our careers, we felt that this was the direction we had to go in. by pasteurizing our ice cream from scratch, we can manipulate the very formulas we start with in order to make our different flavors. we are able to perfectly balance our recipes to accommodate a wide range of ingredients. from sweet bananas to rum, dark chocolate to tart passionfruit, each one of these ingredients requires a unique ratio of cream, milk and sugar to balance out the flavor and texture. it’s the reason we can have flavors that pull ingredients straight from the soil into our base ice cream flavors.

you might think we are crazy. and we are. but we’ve never been one to play it safe.

where do we get inspiration for our flavors?! mostly from farmers!! and that was truly the driving force behind starting this little business in the first place. it is my penultimate goal-to show our community that there is beauty in our crooked food system. these farmers, like @dacquistofarms, @cardifftinyfarm @cyclopsfarms @heart.seeds.orchard even @theplotrestaurant haven’t given up on us yet. they haven’t thrown pesticides or chemical fertilizers at their crops for profits over products despite the challenges farming poses. farming this way is the hardest of all. making ice cream this way isn’t easy either. but picking up produce that was just pulled from the earth, and turning it into a creative and unique flavor of ice cream is what excites us most. this flavor may not fly off the shelves, and that’s ok. it is inventive and unique and off kilter. you may not like it. you may even despise it. you may also love it. quite frankly, i think it is fennomenal. but we aren’t always out here to please every person with every flavor. we are here to step outside of the box and see what we can create with some of the most beautiful produce we can find. this flavor is a complete expression of a fennel bulb, from seed to flower, you will find an expression of each part of the fennel plant in this flavor.

hip! hip! it’s a new year! but before this year really gets rolling, we need to throw an idea at you. over the next few weeks, you are going to be tempted to purchase a gym membership, quit snacking and forget sugar…these choices are personal decisions. and while we can see the merit in such concepts…we just want throw a new take on the new year diet…RIOT AGAINST THE DIET…any takers?!? ehh? ehh?
