In this dish, the oyster leaf complements Connemara oyster and wild turbot from West Cork, plated and served atop Old Country Roses.

Green asparagus from Bia Oisín farm in Claregalway, paired with Connemara white clams and a lovage velouté.

In this dish, the clams act as a natural seasoning to the asparagus, bringing a subtle iodine salinity as the velouté rounds out the flavour. Very seasonal, distinctly West of Ireland.

Potato “cake”. Basically a victoria sponge for dinner. Cooking can still be serious without being taken too seriously. Agria potato cooked in plenty of clarified Irish butter in the style of a rosti, fried then dusted with a seasoning makes from all the dry roasted potato skins and malt vinegar . Filled with a savoury compote of slowly caramelised thinly sliced sweet onions , Madeira and sherry vinegar . Fished with a touch of fromage blanc and toasted nori powder. Regency House menu development in full awing amongst the building works. @regencyhouse_

As Dublin descends back into a washout, all I’m thinking about is a dozen oysters, a glass of @champagnetaittinger and this view from Vaughan’s on the Prom.

Which will be funny to anyone who has known me this last year as I had one rogue oyster in London and I was convinced my relationship with them was over.

After a fairly miserable 24 hours, I started wondering if my favourite Guinness and champagne pairing had suddenly become my nemesis. Fast forward to a martini-fuelled evening in London last week and I found myself throwing them back for no fear of consequence.

Happy to report we’re back on good terms.

Some reunions are worth having. 🍸🦪
