Another great edition of The World’s 50 Best Bars in Milan! Super well organized, great energy, perfect pace, and as always, amazing to catch up with so many friends from around the world.

Danico climbed another 4 spots this year, and of course, I’m happy about it. But the truth is, I don’t need an award or a ranking to be proud of this team.

I see the incredible work they do every day. I read the reviews from our guests, I hear the feedback from friends visiting from all over the world, and the message is always the same: the team is amazing. They are the ones making Danico what it is today, and I couldn’t be prouder of them. ❤️

And one more thing worth celebrating: Paris now has FOUR bars in the Top 50, tied with New York and Hong Kong for the most represented cities in the world! 🇫🇷

Huge congratulations to Cambridge Public House, Bar Nouveau, and De Vie. It’s great to share this list with you guys. The Paris bar scene has never felt stronger or more united, and that’s something worth celebrating.

Le 1er juin dernier, 10 talentueux bartenders venus des quatre coins de France se sont retrouvés pour une journée de compétition hors du commun. Au rythme de 4 épreuves intenses, ils ont fait preuve de créativité pour mettre à l’honneur les gins Citadelle et célébrer l’excellence du savoir-faire français.

Un immense bravo aux 10 finalistes qui ont fait de cette première édition un moment de partage et de mixologie inoubliable.

10 Years of Danico — Jesus Marie Joseph

From Menu 10.

This one was built around flavors you don’t normally expect to find in a cocktail.

We took Planteray Original Dark Rum and infused it with brown butter and fresh ceps, then paired it with walnut liqueur and frankincense.

The idea was to go deep into those earthy, nutty, almost forest-like flavors. The brown butter brings richness, the ceps this incredible umami and earthy side, and the frankincense gives it a completely different aromatic dimension.

Definitely one of the more unusual combinations we’ve done at Danico, but also one that makes a lot of sense once you taste it.

10 Years of Danico — Kota Ternate

This one goes all the way back to Danico’s first menu.

I visited Ternate in 2008, a small volcanic island in the Maluku Islands of Indonesia. While I was there, a local guy took me around the clove and nutmeg plantations and told me about the history of the island.

Ternate was once one of the most important places in the world for the spice trade. People literally crossed oceans for the cloves and spices growing on these tiny islands.

That trip stayed with me and inspired this cocktail: Planteray OFTD and 3 Stars rums, pineapple, coconut, spices, lime and milk.

The name Kota for my Pandan liqueur comes also from there.

Funny how one small island can end up following you for years.

10 Years of Danico — Moussaka Under Control

This one comes from our eleveth menu.

The idea was pretty simple: take the flavors of a moussaka and somehow make them work in a cocktail.

Planteray OFTD and 3 Stars rums, red wine, herbs, black tea, tomato, eggplant, lemon and milk.

The milk clarification pulls everything together and leaves you with something clean and elegant, while the tomato, eggplant and herbs give it this savory Mediterranean side.

And of course, a slice of eggplant on top. Because at that point, why not.

Sweet Banane comes from our seventh menu.

Rum, banana and coconut — three flavors that obviously love each other. But we wanted to make the combination lighter and a little less obvious.

We use Planteray 3 Stars and OFTD with coconut water, banana, our spice blend and whey. The whey gives us a beautifully clear drink while keeping the texture and roundness you expect from banana.

Tropical, spicy, rich but surprisingly clean. Basically, all the comfort of a big banana rum drink, without drinking dessert.

10 Years of Danico

Some ideas start with a technique. Others start with a weird obsession.

For Café Moutarde Banane, we wanted to see what black mustard seeds could bring to coffee. Instead of just heat, they add this incredible wasabi-like lift and a savoury spice that wakes everything up.

Pair that with fresh espresso, coffee liqueur and ripe banana, and suddenly you have something that feels familiar—but not at all expected. Rich, creamy, slightly fruity, gently spicy, and dangerously easy to drink.

One of those cocktails that usually gets followed by the same question:

“Wait… what’s in this?”

Available until September as part of our 10-year anniversary menu, with some cocktails only available while ingredients last. This one is from menu 11.
