PENICILLIN - TAXMAN STYLE

Our first take on twisted classics, made the Taxman way.

• Neutral spirit + ginger & honey - we extract the flavours directly into the spirit, giving us precise control over the intensity and balance.
• Citrus - kept simple, so the main flavours stay clear.
• Heavily peated whisky - used as a seasoning rather than the main spirit, so we can control exactly how much smoke goes into the drink.

We keep the familiar DNA of a Penicillin, but break the classic recipe apart and rebuild it around the flavours we want to highlight. 🥃

At this year’s @perfectserve we will be talking about Drinks Culture! Carrying on with the 50 Best Bars June celebrations, let’s keep this European momentum going! Amsterdam’s bartenders industry is a stunning melting pot. We have invited friends to share their homeland drinks & culinary culture through the lens of our Mexican spirits portfolio. Come & feel how contemporary nostalgia filters through banger cocktails :)

See you on Tuesday & Wednesday!

A conversation with @ingmar_drinks usually starts with a coffee and ends up in print. We’re not complaining.

Congratulations on another fantastic edition of Drinks Magazine, and thank you for giving Taxman such a generous spotlight. We’re honoured to be featured and grateful you chose to tell our story. Here’s to old walls, new tricks, and many more pages worth raising a glass to.

Paloma Day at Sonora

Bartenders, brunch, bingo, and a bunch of @threecents_official Palomas. Exactly how Paloma week should kick-off!

Looking back at a day filled with great drinks, questionable bingo luck, and even better company, followed by a guest shift with @patron by the legends from @sidehustlelondon

Big thanks to everyone who joined, sipped, called bingo too soon, and made it one for the books.

Same time next year?

ANTIQUES 🕰️

A new rotating cocktail on the menu.

In a building with a few centuries of history behind it, it felt only right to occasionally pour some of our own.

While the rest of Taxman focuses on ingredients over brands, Antiques is built around vintage bottles and glassware from our personal collection.

Edition I: Bobby Burns

•1960s Blended Scotch
• 1950s Bénédictine
• 1970s Sweet Vermouth

Once the bottles are gone, so is this edition.

This building has been standing here for centuries.

Once a tax office, today a cocktail bar.

As a protected Amsterdam monument, much of its original character remains - old timber, worn floors and the charm that comes with age.

We did our best not to change that.

Besides our menu and our approach of not flashing brands, we keep a full range of spirits behind the bar to support classic cocktails like the Vieux Carré — a layered mix of spice, herbal notes and centuries of bar tradition.

VIEUX CARRÉ 🥃

• Rye Whiskey
• Cognac
• Sweet Vermouth
• Bénédictine
• Peychaud’s & Angostura Bitters

Rich, herbal, spicy and spirit forward.

Thursday - Sunday
Upstairs in Amsterdam’s old tax district.

COFFEE ☕️

Turns out flavour is not only built on the palate.

Your brain starts processing a drink long before the first sip. Colour, texture and visual contrast quietly influence how we experience balance, acidity, bitterness and body - even when the liquid itself stays exactly the same.

So we decided to play with that a little.

• Coffee Light Roast
• Coconut Oil
• Cascara
• Verjus
• Salt
• Aged Grape Spirit
• Sugarcane Spirit

Served in different coloured @huskee cups made from recycled coffee husks.

A cocktail somewhere between coffee service and a small neuroscience experiment. #coffee #cocktail
